shrimp bisque

Easy-Peasy Prawn Bisque

kg (2lbs) prawns (Shells and heads remove, meat reserved)

(1.5l) chicken/fish stock

bay leaves

garlic

white peppercorns

lemon

sea salt flakes

red onion (finely chopped)

smoked paprika

tomato paste

sugar

cream

salt & pepper

parsley

flour

Place the prawn shells and heads in a pot and add the stock, bay leaves, peppercorns, salt, lemon peel and garlic. Bring up to a boil and allow to simmer for 30 minutes, covered until the stock is well infused by the shells.

After 30 minutes, blend with an immersion blender until as smooth as possible then run through a sieve and discard all of the shells.

In a separate pot, melt a little butter and fry the onion until soft and translucent. Add the garlic and fry for a few seconds before adding the smoked paprika, tomato paste and sugar.

Allow to fry for 30 seconds then pour in the prawn stock.

Cook for 20 minutes then add the prawn/shrimp meat and cook for a few minutes until the prawns are cooked through. Blend the soup until smooth. I do this in my high-powered blender to make sure it's very smooth but you can use any blender and then pass the soup through a fine-mesh sieve again.

Pour the strained/blended soup back into a pot set over medium heat. Pour in the cream and lemon juice and bring to a simmer. Season to taste and allow to simmer for 5 minutes. At this point, if the soup seems too thin, whisk in some flour mixed with water and allow to cook until thickened. Serve the bisque with a swirl of cream and parsley. I fried some whole shrimp/prawns in a splash of oil to add to the top but this is optional.

Season to taste and serve with a sprinkling of chopped parsley.

My easy, Creamy Shrimp Bisque Recipe is a perfect holiday meal or a fun Sunday Supper! I make it every year over the holidays for my family, and everyone who tries it raves about it.

Shrimp Bisque Recipe

celery (finely chopped)

Tbsp. garlic (minced

lbs. shrimp (chopped)

green onions (finely chopped)

olive oil

Tbsp. flour

tomato sauce

white wine

chicken broth

half & half

Parmesan

Salt & pepper (to taste)

Candied bacon pieces ((optional for topping))

Heat

Heat a deep soup pot over medium heat. Add 2 Tbsp. olive oil and swirl it around to evenly distribute it.

Saute

Add 2 finely chopped celery stalks and 2 Tbsp. garlic (minced or paste) and saute for about 3 minutes.

Add 2 finely chopped green onions and saute both for about 2 to 3 minutes.

Melt

Melt ½ stick butter in the pot and cook for an additional 1-2 minutes.

Cook

Spread 5 Tbsp. flour over the ingredients in the pot. Cook for 5 minutes, constantly stirring.

Pour

Pour in 1 cup white wine while continuously stirring. Let it simmer and thicken. When it is thick enough, it will take longer to pool back to the center of the pot when pushed with a spatula.

Combine

Add 2 cups of tomato sauce and let it bubble and thicken while continuing to stir.

Thicken

Once it thickens, add 64 oz. chicken broth and let it simmer. Turn the heat to low and wait for it to cool off somewhat.

Add in 2 cups half & half SLOWLY while stirring for about 1 minute!

Sprinkle

Sprinkle in ½ cup of Parmesan SLOWLY while continuing to stir for about 2 minutes!

Serve

Turn heat back to medium and let the soup sit until it starts to bubble. Season with salt & pepper to taste, and serve!

It wasn’t bad. I would have liked it thicker. Once I put the broth in, it was no longer thick and I didn’t add all 64 ounces. I would make it again.

Enjoyed this very much. Making it again for my sister in law’s birthday. B

Did not add the bacon. My husband and I loved it.

All Time Best Shrimp Bisque Recipe

A thick, creamy shrimp bisque that is simple to make and delivers ultimate flavor. Add a touch of elegance with a drizzle of truffle oil as a garnish.

Creamy Shrimp Bisque

shrimp (or large shrimp, shelled and deveined, reserve the shells)

shallot (diced)

olive oil (chopped)

cayenne pepper

brandy

all purpose flour

milk

salt

white pepper

curly leaf parsley (or flat leaf parsley, chopped)

truffle oil (optional)

Add the reserved shrimp shells to a saucepan with 4 cups of water. Bring to a boil, reduce the heat to low and simmer for 30 minutes. Remove from the heat and pour through a sieve, discard the shells. Measure the broth adding additional water to make 4 cups. Reserve.

For the Shrimp Broth:

Heat the oil In a 4 quart Dutch oven or heavy-bottomed saucepan set over medium heat, add the chopped shallots and sauté until soft, do not brown them, 3-4 minutes. Add the garlic and cook for another minute.

Add the cayenne pepper and the shrimp. Cook until the shrimp turn pink, 3-4 minutes. Remove 6 of the shrimp and reserve for garnish. Add the brandy and cook for 1-2 minutes, add the sherry and cook for another 3 minutes. Working in batches, purée the mixture in a blender until smooth.

Melt the butter in the Dutch oven set over medium-low heat and whisk in the flour, cook for 1 minute then stir in the cream and milk, whisking until thick and smooth. Add the shrimp broth, puréed shrimp mixture, tomato paste, salt and pepper. Cook until hot while whisking continually. Do not let the bisque boil as the cream will curdle, adjust the heat as necessary.

For the Shrimp Bisque:

Ladle the soup into bowls, garnish with the reserved shrimp and chopped parsley. Drizzle a tablespoon of truffle oil on each serving.
