A simple sheet pan meal with so much flavor. 

Mediterranean Shrimp Sheet Pan Dinner

lbs large shrimp, peeled

asparagus

olive oil, divided

garlic,

red onion,

oregano

paprika

lemon

kalamata olives, pitted

feta cheese

fresh parsley, chopped

salt and black pepper,

In a large bowl, toss together shrimp, 2 tablespoons olive oil, garlic, salt, pepper, paprika, oregano, and lemon juice.

Wash and trim asparagus and arrange on a rimmed baking sheet along with the red onion. Drizzle with 1 tablespoon of the oil.

Place shrimp on top of asparagus and onions and bake for 10 minutes.

Remove from oven and top with crumbled feta, olives, parsley, and drizzle with a bit more olive oil. Enjoy!

Just made this recipe and it came out delicious! Next time I’ll do it the 2nd way (with just citrus), but I found this recipe last minute and only had enough time to poach the shrimp then let it marinate 1hr in the citrus juice. I didn’t have all the ingredients on hand, but this still came out yummy! (We were missing jalapeños, cucumbers, and orange juice). Again, everything still came out wonderfully! My bf, who has tried ceviche several times but never enjoyed it, really liked this recipe (even with the missing ingredients). And he’s picky. So that’s saying something! Will definitely make again next week and this time with all the ingredients/marinating in citrus juices for 4hrs.

I made this today. Only thing I say is to add a little more juice of orange. Otherwise it was delish.

This shrimp bowl is easy and delicious—perfect for weeknight meals. This healthy dinner can be on your table in 20 minutes or less. The taco seasoning and endless toppings add so much flavor.

Fiesta Shrimp Rice Bowl

olive oil oil

lime juice ((about 1 large lime))

smoked paprika

cumin

chili powder

garlic powder

salt

black pepper

cayenne pepper ((more if you want it more spicy))

cilantro

shrimp

rice brown rice

red onion

jalapeno (sliced (optional))

chopped cilantro

avocado (sliced)

(15 ounce) can fire roasted corn (draineda)

To serve: Homemade creamy jalapeno ranch (or store bought cilantro ranch)

Start by marinating the shrimp. Add the olive oil, lime juice, spices and cilantro to a bowl medium bowl. Pat the shrimp dry, then add it to the marinade and toss to fully coat. Cover and marinate in the fridge for 15 minutes.

Fiesta Lime Shrimp Bowls Step 2

To cook the shrimp, heat a large skillet over medium-high heat (no oil needed). When it's hot, add the shrimp to the pan in an even layer and cook for 2-3 minutes on one side, flip and cook for another 2-3 minutes on the other side. The shrimp will turn an opaque and pink color and form a loose "C" shape when it's done. Remove the shrimp from the heat and stir to fully coat it in any sauces that are in the pan.
