Shrimp Pasta Salad

salad shrimp (thawed and patted dry,

celery (about 2 stalks)

red bell pepper

peas (thawed)

green onions (finely chopped (about 1/4 cup))

dill

Greek yogurt

lemon juice (from about 1/2 lemon)

honey

white vinegar

Dijon mustard

salt

black pepper (plus additional to taste)

cayenne pepper

Cook the pasta to al dente according to the package instructions. Drain in a colander, then rinse with cold water to stop the cooking. Shake off as much water as possible. Let the colander with the pasta sit in the sink or on a towel to continue draining while you prepare the rest of the salad.

In a small bowl or large measuring cup, whisk together the dressing ingredients: Greek yogurt, lemon juice, honey, white vinegar, Dijon, salt, black pepper, and cayenne pepper.

In a large serving bowl, place the shrimp, celery, bell pepper, peas, green onion, and dill. Shake the pasta once more, then add it to the bowl. Drizzle with the dressing and stir gently to combine. Taste and adjust the seasoning as desired.

If time allows, place the pasta in the refrigerator and chill for 1 hour prior to serving. Enjoy directly from the fridge or at room temperature.

Add the shrimp to the pasta and vegetables. Add in the Mayonnaise, salt, pepper and lemon juice. Gently stir till all ingredients are mixed well. Place in covered bowl and chill for 2 hours. When ready to serve sprinkle with paprika.

Shrimp Macaroni Salad is a summertime staple for any bbq or gathering and comes together quickly with a perfectly seasoned creamy dressing and chunks of shrimp and macaroni pasta. 

Shrimp Macaroni Salad

elbow macaroni

green bell pepper

celery (diced)

shrimp ((peeled & deveined))

sour cream

dijon mustard

dill ((chopped small))

onion powder

sea salt OR kosher salt

black pepper

Cook the elbow macaroni pasta according to the instructions on the box. Cook to al dente, or softer, depending on preference. When the pasta is done cooking, drain it in a colander and then rinse it under cold water. Transfer the pasta to a larger mixing bowl or serving bowl. Set aside.

While the pasta is cooking prepare the creamy dressing. Add all the dressing ingredient into a small mixing bowl and whisk together until well combined.

Add the diced bell peppers, celery, and cooked extra small shrimp into the larger mixing bowl with the macaroni pasta.

Pour the creamy dressing over top and toss everything together until all the ingredients are coated in the creamy dressing.

Cover the bowl with a lid, or plastic wrap, and refrigerate for at least 1 hour or up to overnight.* If refrigerating overnight you may want to moisten up the salad with additional mayo or a splash of milk, give it a good stir, and then serve. * I think this salad tastes best after it has been in the fridge for 1-2 hours. You could also serve it right away after making it, although the short fridge time does chill the salad and allows the flavors to intensify.

This shrimp pasta salad is a cold, creamy, mayonnaise-based pasta salad combined with fresh shrimp, sweet garden peas, boiled eggs, and onion.

Creamy Shrimp Pasta Salad- Mayonnaise Based

shell pasta

½ cup frozen peas

eggs (boiled)

onion (diced)

celery salt

salt and pepper

Bring water to a boil and add shrimp. Boil shrimp about 2-3 minutes or until shrimp are pink and the tails begin to curl.

Remove shrimp from water and place on ice to cool off immediately.

Meanwhile, cook shell pasta. Drain pasta and rinse with cold water until pasta is completely chilled. Set aside in refrigerator while prepping other ingredients.

Chop shrimp into bite sized pieces.

Dice boiled eggs.

Make dressing by mixing mayonnaise, lemon juice, and celery salt.

In a large mixing bowl, mix pasta, diced onion, diced boiled eggs, chopped shrimp, and peas.

Mix in dressing. Salt and pepper to taste. Refrigerate until ready to serve.

This is the perfect spring and summer salad and it is soooo good! The flavor is light and fresh… such a great recipe!

What a terrific salad for a hot evening or a weekend get together you are invited to, everyone will love it.

I added celery, used small shrimp and it was delicious!  I worried it wouldn’t be flavorful with only salt, pepper and celery salt as spices.  I was wrong…it was seasoned perfectly and full of flavor.  The amount of Mayo was balanced perfectly  and the salad was not overpowering with dressing.  We loved this recipe and will definitely make again.

Tip:  "Precooked shrimp that has been refrozen looses its flavor."  The word you want is LOSES, not LOOSES.  Other than that, a delicious, simple pasta &amp; shrimp salad recipe.  We enjoyed it!
