Spicy Cajun Shrimp Skillet is a super fast (15 minute!) and healthy dinner recipe. We love to keep this low carb and serve it with cauliflower rice, but regular rice is delicious, too.

Spicy Shrimp Skillet 

lbs shrimp, peeled and deveined

Cajun seasoning

sea salt

chili flakes

green bell peppers, diced small

small shallots, minced (about 1/3 cup)

tomato paste

stock

Place the shrimp in a bowl and toss with the Cajun seasoning, oil, salt, and chili flakes. Set aside to marinate while you prep the veggies.

Heat a large skillet over medium-high heat. Add the shrimp and sear for 2 minutes. Add the peppers and shallots to the pan then cook for 2 more minutes.

Push the shrimp to the side of the pan and add the tomato paste. Let the tomato paste caramelize for 2-3 minutes, or until it had darkened and is sweet smelling. Stir it into the shrimp.

Add the chicken or vegetable stock to the pan and stir. Season to taste with salt and pepper.

I stumbled on this because, frankly, I was searching for a shrimp recipe I could tolerate. It didn't even have to be great. Just decent. See, I'm not a big fan of seafood, but my husband loves it. On the nights we have cod and shrimp, he cooks, and I choke it down. He loves his one single recipe for cooking cod and shrimp, and it just doesn't pass the test for me. Anyway, since it's just the two of us, we only cook about 6 ounces of shrimp instead of a pound and a half. The first time I made this recipe, I adjusted it to account for such a small amount of shrimp. When I made it again this week, I used the full amount of seasoning and brushed some of it on two pieces of cod which I cooked separately. And all I can say is BRAVO! This is so much better than the decent and tolerable recipe I was looking for. I CRAVE it! Never have I ever had such good seafood at home! The first time I made it, I was sure I did something wrong because it really is so fast and easy, but I clearly hadn't missed any steps because it was an explosion of incredible flavors. Everything about this recipe is so perfect. Even the shallots were a great choice. When I couldn't find shallots in the past, I subbed regular onions. I considered it this time even though my local store had shallots available, but I decided to follow the recipe exactly and use them. The sweetness of them combined with the spicy Cajun seasoning is just incredible. I'm so thrilled to have found a seafood recipe my husband and I both like. Thank you so much for this!

Really good. I’d use a little less than the recommended amount salt, but otherwise it’s spot on. I added a bit of canned corn at the end and thought it came out nicely.

This Cajun Shrimp and Rice Skillet is a one-pot wonder full of flavorful shrimp and rice with a Cajun seasoning that the entire family will enjoy!  

Cajun Shrimp and Rice Skillet

⅓ cups uncooked long grain white rice

chicken broth

shrimp

butter (melted, divided)

garlic

cajun seasoning (see below)

paprika

salt

garlic powder

black pepper

onion powder

oregano

cayenne pepper

red pepper flakes

Whisk together all of the ingredients for the cajun seasoning. Melt 2 tablespoons butter in a large skillet over medium heat. Stir in garlic, half of the cajun seasoning, and the rice. 

Stir in chicken broth, bring to a boil, reduce to a simmer and cover. Cook for 15 minutes, stirring 1-2 times throughout. 

While rice is cooking, prepare the shrimp by stirring together remaining 2 table spoons melted butter and remaining cajun seasoning. Pour over shrimp and toss to coat. 

Stir shrimp into the rice, cover and cook 3-5 minutes longer until shrimp is pink and opaque. Garnish with chopped parsley if desired and serve.&nbsp;

Chimichurri Shrimp and Broccoli Skillet (Low FODMAP, Paleo, Whole30)

Easy Chimichurri Sauce (Low FODMAP, Paleo, Whole30)

Prepare the easy chimichurri sauce and allow to rest while you prepare and cook the remaining ingredients.

Put shrimp in a large bowl and sprinkle with sea salt and freshly ground pepper.

Heat a medium or large skillet (I use a 10.25” cast iron skillet) on medium heat and add 2 tbsp garlic-infused olive oil. Once hot, add shrimp and sauté until bright pink, about 5 minutes, flipping shrimp halfway through. Remove shrimp to a plate and set aside.

Add 1 tbsp of extra virgin olive oil to the same skillet and swirl to coat. Add the broccoli, cover and sauté until fork tender, about 5-7 minutes, stirring occasionally. If the pan gets too dry, either add a bit more oil or the juices from the resting shrimp.

Add the shrimp back to the skillet and remove from heat. Add the chimichurri sauce and stir until shrimp and broccoli are evenly coated.

Serve the skillet on its own or on top of Instant Pot “Garlic” Mashed Potatoes (Paleo, Whole30, Low FODMAP), a baked potato (Paleo, Whole30, low FODMAP), white or brown rice (low FODMAP and gluten-free), cauliflower rice (Paleo, Whole30), or your preferred starch.

butter

garlic (finely chopped)

Cut the vegetables into bite-sized pieces.

Place the shrimp into a medium bowl and add the Cajun seasoning, paprika, salt, and olive oil. Mix well.

Heat a large skillet over medium-high heat. Add the shrimp and cook for about 6-7 minutes, or until cooked through. Remove the shrimp from the skillet and set aside.

To the same skillet, add the garlic, butter, and vegetables. Season with salt, and stir-fry for about 10 minutes, or until the vegetables are tender.

Return the shrimp to the skillet, stir well, and garnish with parsley. Serve.
