Shrimp toast is a retro Chinese takeout classic. A flavorful mixture of ground shrimp spread onto bread and pan-fried until crispy––the perfect appetizer! This shrimp toast recipe makes 16 toasts–-simply double or triple the recipe for larger groups!

Shrimp Toast

pork fat ((30 grams, optional))

shrimp ((225 grams, peeled and deveined))

cilantro

scallions ((finely chopped))

ginger ((grated))

sesame oil

sugar

salt

cornstarch

white sandwich bread

sesame seeds

Vegetable oil (for frying)

If you’re going the traditional route and using pork fat, add the pork fat to a food processor and process until smooth. Then add the shrimp, cilantro, scallions, ginger, sesame oil, sugar, salt, cornstarch and egg white. Process until smooth.

Divide the mixture among 4 slices of sandwich bread, spreading it evenly out to the ends. Sprinkle with sesame seeds, and lightly press the sesame seeds into the shrimp mixture. Cut each slice into quarters on a diagonal to create little triangles.

In a large nonstick or cast iron skillet, heat ⅛ inch of oil until shimmering. Fry the triangles in the skillet, shrimp-side down first, until golden––about 2-3 minutes.

Use a spatula to carefully turn them over, and fry the other side for about 1 minute. Transfer to paper towels to drain. Serve immediately!

To the bowl of a large food processor fitted with the blade attachment, add the shrimp, egg, &amp; salt. Pulse until the mixture&#x27;s smooth.

Add in the green onions, and pulse again- just until they&#x27;re also blended in.

Divide the shrimp evenly out among all the bread triangles. Carefully spread/smooth it out over one face of each triangle.

Fill a large pot with oil, one inch deep. Heat it over medium high heat.

While the oil&#x27;s heating, dip the shrimp mouse covered side of each bread triangle into bread crumbs. Press it in if needed, to ensure that they&#x27;re coated evenly.

Transfer the coated pieces of shrimp to the hot oil. Working in batches of four, add them to the hot oil shrimp side first. When it&#x27;s golden brown, flip it and cook until that side&#x27;s also golden brown &amp; crispy.

Transfer to a paper towel lined plate to drain. Serve immediately after with dipping sauce of choice, and a garnish of fresh thinly sliced green onions.

Shrimp Toast with Creamy Wine Sauce

shrimp,

T. chopped garlic

button mushrooms, cleaned, stems removed and thick sliced

c. red onion, chopped

t. salt

t. ground pepper

c. Garnacha White Wine

T. flour

heavy cream

chicken broth

sourdough bread

thyme

Heat up the oil in a large skillet over medium heat.

Cook the shrimp for 2 minutes on each side until just pink and remove from the pan.

Melt the butter in the same skillet, then add the onion and cook for 3-4 minutes, stirring.

Next add the garlic, stir and cook for a minute more then place in the sliced mushrooms.

Let the mushrooms cook, stirring every couple of minutes until they&#8217;re browned all around. This step will take you about 10 minutes to get the mushrooms good and browned.

Add in the wine to deglaze the pan, stir, then add the flour.

Using a whisk, mix the flour well into the wine and mushrooms and cook for 1 minute.

Next pour in the chicken broth and cream, whisk well to combine with the flour and mushrooms and let it come to a boil.

Once the sauce comes to a boil, whisk again, turn the heat down to low and let simmer for 5 minutes until the sauce thickens.

Place the cooked shrimp back in the pan with the sauce and heat through to warm the shrimp.

Toast the bread and cut in half into triangles, serve two triangles on each plate with a few shrimp and topped with some of the sauce.

¼ tsp Chilli flakes

Lime juice

To make the prawn fillings, add the prawns, egg white, spring onions, garlic and seasoning ingredients in the food processor. Blend it to smooth paste.

Place the sesame seeds in the plate and set aside.

Cut the bread crust out and cut the bread into triangle shapes.

Place about 1 tablespoon size fillings on the bread, spread the fillings evenly on the bread by using a butter knife.

Dip the filling side down in the sesame seeds until the fillings are coated with sesame seeds evenly. Repeat process to remaining bread slices and set aside. Gently toss the excess seeds out before frying.

Heat the oil into medium heat about 320°F, test with wooden chopstick or a piece of bread, one the oil bubbles start sizzling steadily its ready to fry.

Fry the filling side down until crispy and turn sides and fry until golden brown.

Remove from pan and place it on the paper towel to soak the excess oil.

Garnish with chopped spring onions. Serve immediately with spicy mayo, sweet chilli sauce or any of your favourite dipping sauce.

To make a spicy mayo mix the mayonnaise, chilli sauce, chilli flakes and lime juice in a small bowl.

Crispy and non-greasy shrimp toast filled with shrimp mousse and deep-fried to golden perfection. A perfect appetizer for any occasion. So yummy!

Rinse the shrimp with cold running water, pat dry with paper towels. Add the shrimp and all the ingredients in a food processor. Blend well until the shrimp becomes sticky like a mousse.  Remove from the food processor and set aside.

Cut off the crust of the white toast using a bread knife. Discard the crusts. Cut each toast lengthwise into half and then crosswise into six rectangle pieces. Mix the sesame seeds in a small plate. Set aside.

Using a butter knife, spread about 1 tablespoon of the Shrimp Mousse evenly atop each piece of the toast. Roll the shrimp toast on the sesame seeds until the surface is covered with sesame seeds.

Heat 3 inches of the oil in a wok or small stockpot to 350°F (176°C). Gently drop the shrimp toast with the sesame side down. Turn over and dry the white toast part until light brown. Dish out with a strainer or slotted spoon, and drain the excess oil on paper towels. Serve immediately with your favorite chili sauce.

Turn the broiler on low. Put bread slices on a baking sheet in a single layer. Place under the broiler for 3-5 minutes or until lightly browned.  Turn slices over and put them back under the broiler to lightly brown the other side.

Heat olive oil in a skillet over medium heat. Add shrimp, onion, and celery. Cook for 1 minute, stirring frequently.  Add the garlic and sprinkle the skillet with the Cajun seasoning and black pepper. Cook for 1 minute, stirring constantly.  Reduce heat to very low.  Add cream cheese, Parmesan, and Fontina. Stir until the cheese is blended and almost fully melted. Season with kosher salt and fresh ground black pepper

Top the toasted baguette crusts evenly with the shrimp mixture.  Sprinkle with crushed red pepper and place in a 400-degree oven for 10 minutes or until lightly browned and bubbly.  Sprinkle with green onions. Serve immediately.
