Sichuan Garlic Chili Oil

US cup oil ((with a high smoking point))

Mix up your ingredients in a heatproof bowl. You will be pouring hot oil into it, so it MUST be able to withstand the heat.

Add the Sichuan peppercorns into the cold oil and bring it to smoking point. The time required will depend on your oil and your stove, but a general rule of thumb is when you can see it just start to show smoke or if it bubbles when a wooden chopstick in placed in the oil, it&#x27;s ready.

Pour the hot oil into the mixture of spices. Be careful because it will bubble and spit! 

Stir gently and let it cool before enjoying.

Quick & Easy Chinese Chili Oil

red chilies

garlic (finely minced)

avocado oil (or neutral oil)

tsp Sichuan pepper powder

tsp salt

ginger

onion

star anise

bay leaves

cinnamon

cloves

Add the dried red chilis into a food processor and grind on HIGH speed until they become small flakes.

Transfer the chili flakes into a large heat-proof bowl (be careful not to inhale here!). To the same bowl, add minced garlic, Sichuan pepper and salt.

In a pot set over low-medium heat (250 F) add neutral tasting oil. Allow the oil to come to 250 F or place a wooden chopstick inside to check for bubbles to know if you oil is hot enough.

When the oil is hot, add in aromatics: ginger, onion, star anise, bay leaves, cinnamon stick and cloves.

Allow this to simmer for at least 20 (or ideally 30) minutes for best fragrance. Stir occasionally.

After it’s simmered, remove the aromatics from the oil and discard them.

Carefully pour the hot oil into your red chili flakes and let it bubble. As it bubbles, stir the flakes with the oil to prevent the flakes from overcooking or burning.

Allow this to cool to touch. Transfer into a sterilized glass air-tight jar and enjoy! Note: Always use clean utensils when scooping chili oil from the jar to prevent contamination or mold growth.

Easy Chinese Chili Oil

A staple in any Chinese kitchen, this homemade chili oil is aromatic, crispy, and savory. Made with a simple 'three-pour' technique, it beats store-bought versions every time. Perfect for dumplings, noodles, and salads.

Homemade Chinese Chili Oil (Lajiao You)

tbsp White sesame seeds (raw)

tsp Millet chilies (optional, for extra heat)

Neutral oil (Sunflower, Blended, or Canola oil)

Clean the dried chili segments and ensure they are completely dry to prevent oil splatter. Use scissors to cut them into small segments and shake to remove excess seeds.

Place the chili segments, sesame seeds, and optional millet chilies into a heat-resistant container (ceramic or stainless steel). Do not use glass.

Pour the oil into a wok or pot. Heat over high heat until you insert a bamboo chopstick and see rapid bubbles forming around it immediately (approx 375°F/190°C). Turn off the heat.

Pour 1/3 of the hot oil into the chili mixture while stirring. This releases the aroma.

Wait 15 seconds, then pour the second 1/3 of the oil while stirring. This brings out the color.

Pour the remaining oil into the bowl and stir well. The chilies should be brownish-red and fragrant.

Let cool completely before transferring to a clean jar. The color will deepen over time.
