Shake dressing ingredients up in a jar. Taste and adjust to get it just right for how you like it.

Tbsp shallot ((finely minced))

Dijon mustard

lemon juice

tsp honey

olive oil ((extra virgin))

salt & pepper ((to taste))

heart romaine lettuce

In a small bowl, mix the shallot, Dijon mustard, lemon juice, honey, salt, and pepper until well combined. Whisk in the olive oil.

Place clean and dry lettuces and greens in a bowl. Toss with a couple tablespoons of the dressing and a pinch of salt (optional). Top the greens with pea shoots or peas, fennel, radishes, turnip and herbs. 

Drizzle with more dressing and a grind of pepper. Add any other enhancements and serve!
