Blueberry Hand Pies are an easy single serve pie recipe! Made from scratch this homemade hand pie recipe uses blueberry pie filling and an easy pie crust!

If using my all-butter homemade crust, roll the dough then chill for 15 minutes. If using store bought refrigerator crust, allow the crust to warm up on the counter until you can unroll it without it cracking.

Use a 3-inch round cookie cutter to cut circles of dough, re-rolling the dough as needed to use it all. You’ll get about 16 rounds (to make 8 pies).

Lay half the circles on a cookie sheet that’s been covered with parchment or a silpat baking mat.

Spoon about 1 tablespoon blueberry pie filling onto the center of each round. Top with remaining rounds. Use a fork to press the edges to seal. Use a knife to cut at least one or two slits in the top to allow steam to escape while baking. Chill assembled pies at least 20 minutes (while oven is preheating).

Preheat oven to 400°F. Brush cold hand pies with a bit of beaten egg. Bake 20-30 minutes, or until the pies are a light golden on top. Cool before handling.

Store in an airtight container in the refrigerator for up to 3 days or freeze in a single layer for up to 2 months.

This healthy apple crumble will be your new fav go to dessert! It is sweet and simple to make, and made with minimal whole food ingredients! This vegan dessert is gluten free, dairy free and refined sugar free! The perfect healthy guilt free treat!

5-Minute Microwave Apple Crumble for One

Apple

tsp Maple Syrup

Cinnamon

¾ tsp Cornstarch

tbsp Oats

tbsp Oat Flour

tbsp Almond Flour

tsp Plant Milk

Dice your apple into small cubes then mix in a small bowl with cinnamon, maple syrup and cornstarch until the apples are full coated.

Transfer the apples into a small microwave/oven safe dish.

Mix the crumble ingredients in a separate bowl then add it on top of the apple layer.

Microwave for 2-3 minutes, I put min in for 3 minutes.

If using the oven bake at 350f for 25 minutes until the top is golden.

Top with vegan vanilla ice cream and enjoy!

In a mixing bowl, whisk together the egg whites, cocoa powder, applesauce, protein powder and powdered peanut butter until creamy and smooth. 

Divide into 4 ramekins and microwave 1 to 1:30 minutes, or until brownie is set. 

Top each with a teaspoon of peanut butter and any additional toppings.

Sweet, moist and super delicious single serve and low calorie sticky toffee pudding, perfect for weight loss.

230 Calorie Sticky Toffee Pudding for One

g medjool dates

¼ tsp baking soda

water

g full-fat yogurt*

almond milk*

g 0 calorie brown sugar*

g self-raising flour*

g yogurt

tbsp 0 calorie brown sugar

Pre-heat oven to 180°C (356°F). 

Place the dates in a small bowl and add the boiling water and baking soda. Mix well to coat the dates then mash until a paste forms. Set aside.

In a medium bowl, mix together the yogurt, 3/4 of the date paste, the milk and the 0 calorie brown sugar until well combined. Fold in the flour and baking soda and whisk again to combine. 

Transfer the batter to a 9cm ramekin dish and bake for 15-20 minutes or until a toothpick inserted into the center comes out clean or with very few crumbs. Allow to cool in the ramekin for a few minutes. 

Make the sauce by mixing together the remaining date paste, yogurt and sweetener until well combined. 

Transfer the sponge to a dessert plate, top with the sauce and enjoy! 

This is wonderful. I've always made myself sick eating too much sticky toffee pudding, and now my problem is solved. I was afraid it would be too small or the sauce would seem too yogurty, but it was perfect. I did add a few things: vanilla bean powder, ginger root and cinnamon to the sauce and toasted walnuts.
