Tender, juicy, and full of flavor, this braised pork tenderloin cooks along with sautéed cabbage, sweet apples, and smoky bacon to make an easy skillet meal.

Braised Pork Tenderloin with Cabbage and Apples

pork tenderloin (about 1-1/4 lbs)

Salt and black pepper

green cabbage (1/2 medium head, cored)

Using a sharp knife, trim the silver skin from the pork and season on all sides with salt and pepper.

In a large pan over medium-high heat, fry the bacon until crisp and transfer it to a paper towel-lined plate. Drain most of the fat from the pan, turn the heat to medium-high, and add the pork tenderloin. Sear briefly (no more than 1-1/2 minutes) on all sides, transfer to a plate and set aside.

Return the pan to the stove over medium heat and add the butter. Add the diced onion and cook until soft and translucent, 3 to 4 minutes, then add the garlic and continue cooking just until fragrant (do not brown). Add the cabbage and cook until wilted, 6 to 8 minutes. Season to taste with salt and pepper.

Return the bacon to the pan and continue cooking until the cabbage begins to caramelize, 4 to 5 minutes longer. Add the apple, cider, mustard, and brown sugar, combine well, and adjust the seasoning if needed.

Return the pork tenderloin to the pan, nestling it into the cabbage-apple mixture. Cover and cook until an instant-read thermometer registers 140°F when inserted in the thickest part of the tenderloin, 8 to 10 minutes. Transfer the tenderloin to a cutting board and allow it to rest for 5 minutes before slicing.

While the pork rests, increase the heat on the cabbage mixture and cook, stirring constantly, until any liquid has evaporated and the apples are broken down to a chunky sauce-like consistency. Transfer the cabbage mixture to a serving platter. Slice the pork, arrange it on top, and garnish with chopped parsley if desired.

Easy Skillet Pork Tenderloin with cinnamon apples and onions is a low-calorie meal that satisfies with big flavors and hardly any fuss.

Skillet Pork Tenderloin with Cinnamon Apples

gala apples (peeled (optional), and thinly sliced)

olive oil

cinnamon (more if desired)

Peel (if desired) and thinly slice the apples and sweet onion.

Place them in a large preheated skillet over medium heat along with 2 teaspoons olive oil, 1 tablespoon butter, ¼ teaspoon salt, and a pinch of pepper.

Cook, stirring occasionally for 7-10 minutes until the apples are lightly caramelized and the onions are translucent.

Remove from the skillet and keep warm.

To prepare the apples and onions:

Preheat oven to 350-degrees Fahrenheit.

In the same skillet over medium/high heat, sear the pork tenderloin on all sides until golden brown (approximately 3 minutes per side).

Meanwhile, add 1 cup of stock (chicken, beef, or vegetable) to a measuring cup along with ¼ teaspoon of ground cinnamon.

Once the pork is browned, remove it from the skillet and keep warm.

Reduce the heat under the skillet to medium/low and add the prepared stock to the pan, scraping up all the browned bits from the bottom of the skillet (deglazing). Cook, stirring occasionally, for 2-3 minutes.

Return the apples, onions, and pork tenderloin to the skillet with the stock, and spoon some of the sauce and apples over the pork.

Place the skillet into the preheated oven and cook for 50-55 minutes, or until an instant-read thermometer reaches 145-degrees in the thickest part of the meat.

Remove from the oven, cover, and allow the pork to rest for 10-15 minutes before slicing and serving.

To serve, spoon the sauce and apples over the pork and enjoy!

Season Pork

Rub Pork Tenderloin in 1 tablespoon mustard and 1 teaspoon salt. 

Slice pork

Slice pork tenderloin into 1 inch medallions.&nbsp;

Heat Oil

Heat the oil in a heavy bottom skillet or cast iron pan over medium-high heat.&nbsp;

Sear Pork

Sear pork tenderloin 1-2 minutes per side, or until browned. Remove chops from skillet and place onto a clean plate.&nbsp;

Saute Cabbage

Add cabbage and onion to skillet and saute for 3-4 minutes, or until cabbage begins to soften.&nbsp;

Simmer Pork with Cabbage

Add in apple cider, 1/2 teaspoon salt, remaining mustard and bring to a simmer. Add pork tenderloin slices back to the skillet, nestling in cabbage and cider. Simmer for 5 minutes. 

Serve

Turn off heat and stir in apple cider vinegar.  Serve immediately.
