Slow-Cooker Chicken Casserole

Slow-cooker chicken casserole

Heat a knob of butter and ½ tbsp rapeseed or olive oil in a large <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">frying pan</a>, cook 1 finely chopped large onion for 8-10 mins until softened and starting to caramelise.

Meanwhile, put 1 ½ tbsp flour and a little salt and pepper in a bowl and toss 650g boneless, skinless chicken thigh fillets in it.

Add 3 crushed garlic cloves and the chicken to the pan and cook for 4-5 mins more until the chicken is starting to brown.

Transfer to your <a href="https://www.bbcgoodfood.com/howto/guide/slow-cookers-and-how-use-them">slow cooker</a>, along with 400g halved baby new potatoes, 2 diced celery sticks, 2 diced carrots, 250g quartered mushrooms, 15g dried and soaked porcini mushrooms with the 50ml soaking liquid, 500ml chicken stock, 2 tsp Dijon mustard and 2 bay leaves.

Give it a good stir. Cook on Low for 7 hours or High for 4 hours.

Remove the bay leaves and serve with a little Dijon mustard on the side.

Moist, tender, and flavorful this slow cooker rosemary chicken is so much better than store bought rotisserie chicken.

Slow Cooker Rosemary Chicken Recipe

(4 chicken

crushed garlic, I used jarred

rosemary

thyme

poultry seasoning

Ideal Slow Cooker Size: 6- to 7-Quart.

Remove the sack of chicken innards from inside the chicken and discard.

Rub the inside of the chicken with garlic and Kosher salt.

Stuff the onion wedges, rosemary and thyme sprigs into the chicken cavity.

Place the chicken in the slow cooker.

Rub the olive oil over the outside of the chicken.

Combine the poultry seasoning and seasoning salt and sprinkle all over the outside of the chicken.

Cover and cook on LOW for 4 to 6 hours, or until the meat is tender, the drumsticks move freely when you wiggle them, and the juices run clear when pierced with a sharp knife.

Lift the chicken out of the slow cooker and onto a platter. Cover with foil to keep warm.

If desired, make a gravy right in the slow cooker:&nbsp;Stir together 1/4 cup cornstarch and 1/4 cup cold water until smooth. Pour mixture into the juices left in the slow cooker. Stir well. Cover and cook on high for about 10 to 15 minutes until thickened and bubbly. If the mixture gets too thick, thin to desired consistency with more water. Taste and add more salt and pepper if desired.

This Chicken in Red Wine Sauce is a flavorful slow cooked chicken dish similar to the French Dish, Coq au Vin! It’s a great dish for special occasion as it can easily be the showstopper of your dining table. You can either slow cook it on the stove top or let it cook in the oven. I have explained both the steps.

Once it's starts to sizzle, layer the sliced mushroom and let it brown for 3 minutes then toss and continue cooking until the mushrooms are golden brown. Do not add salt in the beginning, instead add later once it's browned. Take off the pan once done.

These tender and insanely tasty chipotle chicken drumsticks are a crowd-pleasing dish! It’s perfect to serve during family gatherings or holiday parties. Sweet from the tomatoes and spicy from the chipotle pepper, this recipe is perfect for keto and paleo people! 

Slow-Cooked Chipotle Chicken Drumsticks

kg chicken drumsticks (8 medium drumsticks)

tomato purée

garlic,

tbs chipotle paste

250 ml (1 cup) water

Sea salt

Olive oil

Preheat the oven to 175C (350F).

Season the chicken drumsticks with sea salt and freshly ground black pepper to your taste and set aside.

Combine the tomato purée and chipotle paste in a small mixing bowl, season with salt to your taste, and set aside

Heat an enameled Dutch oven over medium-high heat and add some olive oil.

When the Dutch oven is hot, fry a maximum of 4 drumsticks at a time for 3-4 minutes on each side, or until the surface becomes slightly golden. You don’t need to cook them through! 

When you’re done browning the chicken drumsticks, remove them from the Dutch oven and set aside.

Add some extra olive oil to the Dutch oven and cook the onions and garlic until they just turn golden.

Without removing the onions and garlic, add half the water to the Dutch oven to deglaze it.

Return the chicken drumsticks to the Dutch oven and add the tomato mixture. Rotate the drumsticks so they are completely covered in the tomato mixture, cover with the lid, and pop into the oven for 45 mins.

Take the Dutch oven out from the oven, open the lid, add the remaining water, and return it to the oven for another 30 mins or until the drumsticks are starting to turn brown and crisp.

Serve warm with some freshly chopped cilantro!

Rustic braised chicken recipe with sweet carrots and onions, earthy celery and savory garlic.

Braised Chicken Recipe

chicken quarters ((or substitute with chicken drumsticks, thighs

Salt and pepper ((to taste))

Garlic powder ((to taste))

Onion powder ((to taste))

Tbsp red wine vinegar

Tbsp parsley ((chopped, for garnish))

Season the chicken with salt, pepper, garlic and onion powder. Set aside.

Heat two tablespoons of butter and two tablespoons of olive oil in a braiser over medium heat. Add the chicken, cover and let sear for 3-4 minutes, or until the chicken is nicely browned. Flip, cover and continue searing for another 3-4 minutes. Remove the chicken from the braiser and set aside.

Add the onions, celery and carrots to the braiser. Bump the temperature up to medium high and cook, stirring, for about 5 minutes, until the vegetables are slightly caramelized and softened. Add the garlic and cook for about 30 seconds more.

Add the remaining butter to the braiser and let it melt. Add the flour and mix really well, ensuring no clumps remain. Cook, stirring until the flour turns brown and acquires nutty aroma.

Pour in the broth and stir well. Turn off the heat. Taste and adjust the seasonings. Stir in the red wine vinegar. Add the chicken back, nestling the pieces inside the vegetable mix.

Cover the braiser and transfer to an oven preheated to 350 F.&nbsp; Braise for 2 1/2 to 3 hours.

Remove the chicken from the oven and serve hot with jasmine rice or any other side dish of choice. Give the sauce/gravy a stir before pouring over chicken. Garnish with chopped parsley.

Cornish hens are a favorite in our home. They are small, convenient for everyone and so delicious. Although I love this grilled chicken recipe, this new one is handy as it is done in the slow cooker which is for sure one of my favorite methods for cooking.

CORNISH HEN RECIPE SLOW COOKER; MEDITERRANEAN STYLE-New

This slow cooker chicken curry is inspired by Indian flavours and is the perfect dinner recipe. The chicken is juicy, the gravy is luscious and not watery, and its fantastic served with rice or naan bread. Slow Cooker Chicken Curry

Onions (finely chopped)

Garlic (minced)

7-8 Baby Potatoes (cut into half (or 2 large potatoes, diced into 1 inch pieces))

Chicken Thighs (skinless and boneless, cut into 1 inch pieces)

Bayleaf

Cloves

6-8 Peppercorns (whole)

Green Chilli (finely chopped (or Serrano Pepper))

Coriander Powder

Red Chilli Powder (or chilli flakes)

Turmeric Powder

Garam Masala Powder

Salt

Tomato Puree

Water

Butter

Heat oil in a pan and add chopped onions and minced garlic. Saute for 3-4 minutes till the onions soften. Transfer this mixture to the slow cooker along with all the other ingredients. Mix well.

Cover and cook on high for 3.5-4 hours or low for 6 hours. Once the chicken curry is cooked, mix in the chopped coriander and serve hot on top of steamed rice or with some butter naan.

Love this recipe. I’ve made it a few times now and it’s delicious. Last time I made it I had everything (I thought) ready to go when I realised I had no potatoes. I put it 3 desert spoons red lentils and oh my word!!! Family favourite definitely.

I have done this recipe many times.  I love how simple it is and the flavour is amazing.  The only change I make is that I put chopped corriander stalks in the pot too.  I love it.
