Use whichever beans you have in the cupboard for this richly spiced beef and chipotle slow cooker chilli. It's a perfect meal to prepare for busy weeknights

Slow cooker chilli con carne

olive oil

beef mince

onion

celery

red pepper

garlic

tsp cumin

tsp smoked paprika

oregano

2-3 tbsp chipotle chilli paste

tomato purée

can chopped tomatoes

beef stock

can black beans

chocolate

tortilla chips rice

Set the slow cooker to low. Heat 1½ tbsp oil in a large, non-stick pan over a high heat and fry the mince for 10-12 mins or until evenly browned. Tip into the slow cooker.

Heat the remaining oil in the pan. Fry the onion, celery and pepper for 10 mins or until softened. Add the garlic, cumin and paprika and fry for 1 min. Tip into the slow cooker.

Stir in the oregano, chipotle paste, tomato purée, tomatoes and stock. Season. Cover and cook for 6-8 hrs.

Stir in the beans and chocolate during the final 30 mins of cooking. Serve with a bowl of rice or tortilla chips and a dollop of soured cream.

Easy Slow Cooker Chilli Con Carne (No Browning)

Onion (peeled and chopped)

Garlic Cloves (peeled and chopped)

Red Pepper (diced)

500 g Minced Beef (5% fat

300 g Passata

tbsp Tomato Puree

ml Beef Stock (made with stock pot

tsp Sweet Chilli Sauce

Worcestershire Sauce

tbsp Smoked Paprika

tbsp Cumin

tsp Chilli Flakes

tsp Oregano

400 g Tin of Kidney Beans (drained)

Salt and Pepper

tbsp Thickening Granules

Place the onion, garlic, and red pepper in the bottom of the slow cooker basin.

Mix in the minced beef.

Add the passata, tomato puree, beef stock, spices, sweet chilli sauce, Worcestershire sauce, kidney beans and salt and pepper. Give everything a good stir.

Cook on a low heat for 6 hours. Remove the lid for the last hour of cooking to thicken the sauce. Alternatively, use some thickening granules. Garnish with chopped coriander, grated cheddar, and red chilli (for the adults!)
