This healthy Slow Cooker Quinoa Enchilada Casserole takes only 15 minutes of prep, then add it all into the slow cooker! It’s filling, serves lots of leftover and is bursting with flavour!

Slow Cooker Quinoa Enchilada Casserole

vegetable broth ((540 milliliters))

quinoa ((270 grams))

black beans, drained and rinsed ((425 grams))

corn kernels, drained and rinsed ((418 grams))

enchilada sauce ((150 milliliters))

green bell pepper ((roughly 100 grams))

red bell pepper ((roughly 100 grams))

medium onion (chopped OR ½ large red onion (100 grams))

garlic (minced)

chili powder

sea salt

black pepper

cumin powder

juice of 1 large lime (about 1 ½ tablespoons)

mozzarella cheese shreds (or a mix if you like)

TO GARNISH: chopped parsley (chopped tomatoes, vegan sour cream)

Add the veggie broth, and then all the ingredients EXCEPT the cheese and the lime into the slow cooker. Stir a few times to completely combine.

Set the slow cooker to HIGH for 2 to 2 ½ hours. I've made it both ways, and it just depends on your individual slow cooker.

When there are about 10 minutes left, open the slow cooker and add the lime juice and ½ the cheese. Stir it in as best as you can, then smooth the mix back flat again. Sprinkle the rest of the cheese over the top. Place the lid back on and let it cook for the last 10 minutes.

When the casserole is ready, serve  with your favourite toppings (avocado, chopped green onions, parsley, tomato and sour cream). Enjoy!!

A delicious and easy breakfast casserole with eggs, sausage, potatoes and cheese -- made in the slow cooker!

Crock Pot Breakfast Casserole

lb. bulk pork sausage

(28 ounce) package frozen Potatoes O’Brien with peppers and onions, thawed

(about 8 ounces) grated cheddar cheese

eggs

milk

pepper

Brown sausage in a skillet over medium-high heat until no longer pink; drain.

Spray a 6-quart slow cooker with cooking spray.

Place half of the potatoes in the bottom of the slow cooker. Top with half of the sausage, and then add half of the cheese.

Repeat layers one more time, ending with the remaining cheese on top.

In a large bowl, whisk together eggs, milk, seasoned salt, and pepper.

Pour egg mixture evenly into the slow cooker.

Cover and cook on LOW for 4-5 hours, or until eggs are set. Turn off the slow cooker, remove the lid, and place the slow cooker insert on a cooling rack. Let stand (UNCOVERED) for about 30 minutes. Slice and serve!

canned cream of mushroom soup (or cream of chicken soup)

Worcestershire sauce

garlic powder

vegetables green beans

cheddar cheese (shredded)

Spray the bottom of a crockpot with nonstick cooking spray. Arrange half of the frozen tater tots in the crockpot.

In a skillet, cook ground beef and onion, season with salt and pepper, and cook until the beef is no longer pink. Drain grease and add the meat to a mixing bowl.

To the same bowl, add milk, condensed soup, Worcestershire sauce, garlic powder, frozen mixed vegetables, and half of the cheddar cheese. Give everything a mix.

Add the mixture to the crockpot, and layer over the tater tots. Then sprinkle on the remaining cheese, and top with the rest of the tater tots.

Cover and cook on high for 3-4 hours, or on low for 6-8 hours.

Delicious!  It was a hit at a potluck luncheon.  I'm going to make it again soon.

Added Rotel and canned corn and a package of taco seasoning. don't know how it will taste but we shall see. everything else is by the recipe.
