Slow Cooker Red Lentil Curry with Sweet Potatoes

red lentils

sweet potato ((about 3 medium))

vegetable broth

water

shallot (finely chopped)

Thai red curry paste

garam masala

turmeric

garlic (minced (about 1 tablespoon))

coconut milk

brown rice or quinoa

Lemon

Coat a 5-quart or larger slow cooker with nonstick spray. Rinse the lentils, then add them to the slow cooker. Add the sweet potato, vegetable broth, water, shallot, curry paste, garam masala, turmeric, sugar, ginger, salt, garlic, and tomato paste. Stir well to combine. Cover and cook on HIGH for 3 to 4 hours or LOW for 6 to 7 hours, until the lentils and sweet potatoes are tender. Turn off the heat and stir in the coconut milk. If you’d like a thinner consistency, stir in additional broth or water.

Taste and adjust seasoning as desired. Serve hot over prepared brown rice or quinoa. Garnish with lots of fresh cilantro and a squeeze of lemon or lime.

Red Lentil Curry

This Slow Cooker Beef Curry is an easy and comforting meal with a kick of spice. Slow cooked chunks of tender beef in a rich and spicy sauce served over a bed of rice.

Slow Cooker Beef Curry

olive oil

400 g braising steak (trimmed of fat and cut in to chunks)

shallots

garlic

red chilli (finely diced)

tsp turmeric

tbsp each of ground cumin, ground coriander and garam masala ( )

400 g chopped tomatoes (canned)

tomato puree

tbsp fat free natural yogurt

g coriander

Sea salt and black pepper

rice (to serve)

Preheat your slow cooker to low. Heat the oil in a frying pan over a high heat and then add the steak and brown for 2-3 minutes. Transfer the steak to the slow cooker pot.

Add the shallots, garlic, ginger and chilli to the frying pan and cook over a low heat for 2 minutes. Add all the spices and salt and pepper, stir well and cook for a further 1 minute.

Add the shallot mixture to the slow cooker pot along with the chopped tomatoes and tomato puree and stir well. Cook on high for 4 hours or low for 8 hours until the beef is tender.

Stir through the yogurt and fresh coriander and serve with rice.

Add the first 11 ingredients (paneer through ground coriander) to the slow cooker, and add a generous pinch of salt and pepper. Mix well, and cook on high for 4.5 - 5 hours, until the vegetables are all soft.

Add the cream, and mix well. Serve topped with another drizzle of cream if desired, and some fresh coriander (cilantro)

The night before place the chickpeas in a 6 to 8 quart slow cooker and cover with water to soak.&nbsp; Do NOT turn it on.&nbsp; In the morning drain and replace the chickpeas in the slow cooker.

In a large skillet heat the oil over medium high heat.

Add onion and saute for 10 minutes.&nbsp; Add the garlic and cook 5 more minutes.

Add all of the remaining ingredients and stir well.

Cook on low 8 to 9 hours.&nbsp; Serve with Basmati rice.

Combine

Place the lentils in the bottom of a 4-quart or larger slow cooker. Add the onions, garlic, cauliflower, ginger, curry paste, salt, turmeric, coriander, cumin, cayenne, and cardamom, then stir to combine.

Liquid

Pour the tomato puree over the top of the cauliflower and lentils. Refill the tomato puree can halfway with water, then pour it over the top of the slow cooker ingredients so that they are covered with liquid.

Cook

Cover and cook on high for 4-5 hours or low for 7-8 hours, until the lentils are soft.

Serve

Just before serving, stir in the coconut milk. Serve over brown rice, quinoa, or farro, topped with fresh cilantro.
