This healthy Slow Cooker Quinoa Enchilada Casserole takes only 15 minutes of prep, then add it all into the slow cooker! It’s filling, serves lots of leftover and is bursting with flavour!

Slow Cooker Quinoa Enchilada Casserole

vegetable broth ((540 milliliters))

quinoa ((270 grams))

black beans, drained and rinsed ((425 grams))

corn kernels, drained and rinsed ((418 grams))

enchilada sauce ((150 milliliters))

green bell pepper ((roughly 100 grams))

red bell pepper ((roughly 100 grams))

medium onion (chopped OR ½ large red onion (100 grams))

garlic (minced)

chili powder

sea salt

black pepper

cumin powder

juice of 1 large lime (about 1 ½ tablespoons)

mozzarella cheese shreds (or a mix if you like)

TO GARNISH: chopped parsley (chopped tomatoes, vegan sour cream)

Add the veggie broth, and then all the ingredients EXCEPT the cheese and the lime into the slow cooker. Stir a few times to completely combine.

Set the slow cooker to HIGH for 2 to 2 ½ hours. I've made it both ways, and it just depends on your individual slow cooker.

When there are about 10 minutes left, open the slow cooker and add the lime juice and ½ the cheese. Stir it in as best as you can, then smooth the mix back flat again. Sprinkle the rest of the cheese over the top. Place the lid back on and let it cook for the last 10 minutes.

When the casserole is ready, serve  with your favourite toppings (avocado, chopped green onions, parsley, tomato and sour cream). Enjoy!!

Slow Cooker Enchiladas

beef (93% lean)

jalapeno peppers

oz cream cheese (softened)

taco sized flour tortillas (or 4 large burrito sized)

enchilada sauce

oz shredded cheese blend

Add ground beef and diced jalapeño to skillet and cook while breaking apart with spatula until beef is cooked through and jalapeño is tender

Stir in cream cheese until smooth, stir in about 1/2 cup enchilada sauce and remove from heat

Add 1 cup enchilada sauce in bottom of casserole slow cooker

Divide filling among tortillas and add to slow cooker seam side down

Top with remaining sauce and shredded cheese

Cook on high for 2 hours or low for 4 hours until heated through and cheese melted

These pinto bean and corn stuffed enchiladas can be assembled in minutes and cook up easy and hands free in the slow cooker.

corn kernels (fresh or frozen and thawed)

onion (diced)

To make the sauce, coat the bottom of a medium pot with oil and place it over medium heat. Whisk in the flour, and as soon as it starts to bubble, whisk in the chili powder, cumin, and garlic powder. Once mixed, whisk in the water and tomato paste. Raise the heat and bring the mixture to a boil. Lower heat and allow it to simmer for about 10 minutes, stirring occasionally until it thickens up a bit. Remove the sauce from the heat and allow it to cool for a few minutes while you prepare the filling.

In a medium bowl, stir together the pinto beans, corn, onion, garlic, green chiles, cumin and oregano. Season the mixture with salt to taste.

Ladle about half of the sauce into the bottom of your slow cooker. Place a tortilla onto a work surface and spoon 1/2 cup of the filling into the center. Roll the tortilla tightly and place it seam side down into the slow cooker. Repeat until all tortillas and filling are used — you might need to layer a few enchiladas on top of each other. Distribute the remaining sauce evenly over the enchiladas.

Cook for 2 to 3 hours on high or 4 to 5 hours on low.

Divide the enchiladas onto plates and serve with avocado slices, cilantro and scallions.
