This Slow Cooker Creamy Meatloaf with Baby Dill Potatoes is full of savory seasonings and topped off with a creamy gravy and served up with delicious baby potatoes soaked (yes, soaked!) in butter and dill!

Slow Cooker Creamy Meatloaf with Baby Dill Potatoes

For the meatloaf:

beef

reduced fat ground pork

eggs

milk

brown minute rice

asiago cheese

salt

For Potatoes:

bag Baby Dutch Yellow Potatoes (washed clean)

butter (for later)

dill (for later)

parsley (for later)

salt (for later)

For Gravy:

beef broth

heavy cream (for later)

corn starch + 2 tablespoons water (for later)

In a mixing bowl combine all meatloaf ingredients.  Use your hands to mix it all up until well combined then form into a loaf shape and carefully place in center of the crock.

Surround meatloaf with baby potatoes

Add beef broth

Cover and cook on low for 6-8 hours or high for 3-4 until meatloaf is fully cooked through

Use a slotted spoon to remove potatoes to separate bowl and add remaining potato ingredients.  Cover with foil until ready to serve, then stir to evenly coat potatoes

Remove meatloaf to platter and allow to rest before cutting while making gravy

Strain broth into saucepan

Mix cornstarch and water until smooth to create a slurry and add it to broth

Add heavy cream to pan and whisk constantly over high heat until it starts to simmer

Let it simmer for about 3 minutes until it thickens

Serve over sliced meatloaf with potatoes on the side

In large bowl add your ground beef, onion, eggs, breadcrumbs, garlic, milk, italian seasoning, parsley, salt, pepper and ketchup.

Mix together gently with your hands or a wooden spoon until it just comes together.

Line a crockpot with tinfoil and place your meat mixture into pot and shape into a loaf.

Cover and cook on high for 3 hours or low for 6 hours.

Drain off any grease, then remove meatloaf with tinfol and place on baking sheet.

In small bowk whisk together ketchup, brown sugar and worchestershire sauce until combined, slather over whole meatloaf (you may have some leftover, use this for dipping).

Place in oven and broil for a few minutes until bubbly and baked on slightly.

Sprinkle with fresh parsley if desired.

oz baby carrots (finely diced)

oz zucchini squash (finely diced)

Dutch baby potatoes

buttermilk ((more if needed))

heavy cream ((more if needed))

butter

salt and pepper

Mix panko bread crumbs and milk in small bowl and let soak for 5 minutes

Add to pork and beef in a large bowl

Add egg, diced veggies, shallot and seasoning

Mix gently using hands until well mixed but do not over mix

Form into a loaf shape

Place baby potatoes in bottom of slow cooker

Add meatloaf to slow cooker on rack above potatoes OR use roll foil into strips to make your own rack

Add broth to cover potatoes and add lid and cook on high for 4 hours or low for 8

Remove potatoes to large bowl (rinse if needed to remove bits of meat)

Add cream, buttermilk, butter and blend using a hand masher or electric mixer

Add more cream or milk if needed and salt and pepper to taste

Slice meatloaf into 1 to 1 1/2 inch thick slices

Transfer pan dripping to saucepan and add a cornstarch slurry of 1/4 cup cornstarch whisked with 1/4 cup water until smooth

Bring to a simmer until thickened and serve over meatloaf and potatoes

Slow Cooker Savory Meatloaf

lbs lean ground beef

tbsp dehydrated minced onion -OR- 1/4 cup finely chopped fresh onion

tbsp au jus gravy mix

chili sauce

garlic powder

tsp pepper

Mix all ingredients and place in a 5-7 quart slow cooker.

Cook on low for 6-8 hours, high 3-5 hours. Always check at minimum time. Times are approximate as all cookers cook differently.

Crockpot Meatloaf

yellow onion (finely minced, divided)

In a small mixing bowl, mix all brown sugar ketchup glaze ingredients (reserving the rest of the minced onion for the meatloaf itself), stirring or whisking to combine well. Set aside.

Tear off a large strip of aluminum foil (heavy duty works well), and press it into the bottom and up two of the sides of a 6 quart or larger slow cooker.  Spray lightly with non-stick cooking spray, then set aside.

Add ground beef, remaining minced onion (from step 1), stuffing mix, milk, eggs, 2 tablespoons glaze, salt and pepper.  Use your hands to mix until just combined (being careful not to over mix).

Shape into an oval-like shape and place into the foil lined crockpot.  Top with ½ cup of the glaze, cover, and cook on LOW for 6 hours.

When finished cooking, carefully lift out the meatloaf, using the foil overhang, and place on a baking sheet.  Top with ⅔ cup of the glaze and broil until glaze is sticky and bubbly.

Serve sliced, with remaining glaze sauce served on the side for drizzling.

Thank you for posting! I made this yesterday using your basic recipe but changed a bit, so I thought I'd comment for others to try.
I only used 1/2 cup milk but added a third egg. I also added 2 cloves garlic, 2 stalks celery and a can of sliced mushrooms, all diced small. It fit perfectly into a 9x9" glass pan in my counter convection oven. Halfway through I tipped off some of the grease accumulating on the sides. I let it cool, then cut and froze half. You could halve the recipe if you add in some veg and it would fit nicely in a loaf pan.
I could only find a chicken Stove Top box - not much flavour, so next time I'll try a different one.

Made as directed, except I swapped out the apple cider vinegar for balsamic and mixed in some red pepper flakes., then I put the loaf in my 6 qt. crockpot and cooked on Low for 6 hours. The last time I made a loaf in the oven, it splattered so much I was forced to clean it afterwards. And bachelors hate to clean! Two thumbs UP!

I'm definitely making this again. I had dental work and need soft food and remember how amazing this was. I had bbq sauce and used it instead of chili sauce. Well letting the flavors soak in and being soft are what I need, something that's also really yummy, and this fits the bill. Can't wait to do it again. Hubby loved it so he won't mind.

I made this tonight in the oven and holy cow!!! What a winner! I have never enjoyed meatloaf with ketchup on top until tonight. This will forever be my go-to meatloaf! Oh I didn’t have stuffing mix so I just used the equivalent of seasoned bread crumbs. Delicious!

Maybe you could mix up the meatloaf and divide it into two, and freeze one for later (either before or after cooking). I know how difficult it is cooking for one person! You could also just half the amounts. I saw another recipe online for a smaller recipe, using 1/2 lb of meat and it still said to cook 5 and 1/2 hours, so I'd think the time would be about the same if you just halved this recipe and used 1 lb of meat. (Four sevings isn't so much to contend with and then you could freeze some of those leftovers in serving sizes.)

My Crockpot Meatloaf is a juicy and flavorful dinner that can be easily made in the slow cooker. It is classic comfort food made with ground beef, cheddar cheese, and a sweet and tangy glaze. This is one of my favorite foolproof recipes because it always turns out great and takes just a few minutes to prep. I simply mix everything together, shape the meatloaf, and let the slow cooker do the rest.

In a large bowl, combine all the beef mixture ingredients thoroughly.

The meat is done cooking when an instant thermometer inserted in the center of the loaf reads 160 degrees F.

When finished cooking, carefully lift out the meatloaf, using the foil overhang, and place it on a baking sheet.

Using a kitchen brush, top the meat with about 1/2 cup of the glaze, then place it under the broil for a few more minutes till sticky and bubbly.

Crockpot Meatloaf Recipe

Using a long piece of aluminum foil, line the slow cooker pot. This should create a sling, with pieces hanging on either side so you can easily lift it out of the pot. Sometimes I use two layers to make it sturdier. Spray well with cooking spray. Set aside.

In a large mixing bowl, combine the milk, breadcrumbs, eggs, onion, garlic, Worcestershire sauce, seasoned salt and black pepper. Stir to make a paste.

Breaking into small pieces, add the ground meatloaf mix and toss to blend together. This is easiest using your hands. Do not overwork the mixture. Shape into a oval (like the shape of your slow cooker) and transfer to the slow cooker pot.

In a separate small mixing bowl, whisk together the glaze ingredients including ketchup, brown sugar, Dijon and balsamic vinegar.  Spoon over the meatloaf.

Cover and cook on low for 6 hours.

Carefully remove the meatloaf using your sling. Remove and allow to rest for 10 minutes before slicing and serving.

Thank you so much for the recipe!  I modified it a little- used 2lbs beef, 1lb pork, 3c frozen zucchini leftover from the garden (drained), omitted the breadcrumbs and milk, and used 4 eggs.  It kept shape well and tastes good. But that glaze is amazing!!
