Slow Baked Salmon with Herb Shallot Butter

olive oil

salmon

½ cup 1 stick butter, (softened)

shallot (minced)

Tbsp chives (chopped)

Tbsp dill (chopped)

lemon

tsp kosher salt

tsp black pepper

capers

Preheat oven to 275 F. Line a rimmed baking sheet with aluminum foil or parchment paper, then drizzle with olive oil. Pat salmon or arctic char dry with a paper towel, then place on baking sheet.

In a small bowl, combine butter, shallot, chives, dill, lemon zest, salt, and pepper. Mix well, then spread evenly on top of the fish. Bake until barely cooked through, about 20-25 minutes (time may vary depending on the thickness of the fish -- pull salmon out when it registers 120 F in the center). Top with capers and serve immediately with lemon wedges.

Weeknight Slow Baked Salmon with Herb Shallot Butter

Tender, flakey slow-roasted salmon and potatoes. An easy dinner, flavored Mediterranean-style with fresh garlic, thyme, rosemary and a splash of lemon juice.

Slow Roasted Salmon and Potatoes Recipe

lb baby potatoes, (scrubbed and cut in half)

Kosher salt and black pepper

tsp + 1 tbsp fresh thyme (divided)

tsp rosemary (dry rosemary) (divided)

Extra virgin olive oil

If you’re making the potatoes, start by heating the oven to 450 degrees F. If not, skip to step 5.

Put the halved potatoes in a large mixing bowl. Season with kosher salt, black pepper, 1 teaspoon fresh thyme and 1 teaspoon dry rosemary. Add 2 teaspoons minced garlic and 2 tablespoons extra virgin olive oil. Toss to make sure the potatoes are well coated.

Arrange the potatoes, cut side down, on a sheetpan or baking dish. Roast in the heated oven for about 25 minutes.

Remove the potatoes from the oven and push the potatoes to one side of your  pan to make room for the salmon.

Turn the oven heat down to 250 degrees F. Wait for the heat to lower to this point.

Brush the bottom of the sheet pan where you made room for the salmon with a bit of extra virgin olive oil. Season the salmon with kosher salt on both sides and put it in the pan next to the potatoes.

Drizzle about 3 to 4 tablespoons extra virgin olive oil over the salmon fillet.  Spread the remaining fresh garlic on top (I use the back of a spoon to spread the garlic evenly all over the fish fillet). Sprinkle the remaining rosemary and fresh thyme.

Roast the salmon in the 250 degree F heated oven for 15-18 minutes for medium rare, or up to 25 minutes for medium, depending on thickness of fish (insert a fork in the thickest part of the salmon, it should meet no resistance and should flake easily). To be sure, insert an instant read thermometer in the thickest part of the fish, it is ready when the internal temperature registers 125 degrees F for a medium-cooked salmon.

Squeeze some fresh lemon juice on top of the salmon. Serve immediately.

Heat the oven to 250 degrees F.

Lightly oil the bottom of a baking dish and arrange some of the orange and lemon slices on it.

Season the salmon with kosher salt and black pepper on both sides. Mix together the oregano, mint, and Aleppo chile flakes. Rub this seasoning mix over the salmon.

Place the	seasoned salmon in the baking dish over the arranged citrus slices. Top with the minced garlic, lemon juice, and drizzle with 2 to 3 tablespoons of extra virgin olive oil. Arrange the remaining citrus	slices on top of the salmon and drizzle with a bit more olive oil.

Roast in the heated oven for about 25 to 30 minutes, watching carefully to make sure the salmon does not overcook (the top may look a bit translucent still, but if the salmon flakes easily, it is ready).

Preheat oven to 275ºF. Line rimmed baking sheet with parchment paper for easiest cleanup. Remove the salmon from the refrigerator to take some of the chill off.

In a small bowl, combine the sour cream, 2 tablespoons of mustard, the dill, capers, caper brine, salt, and pepper. Zest half of the lemon into to the bowl, then cut it in half and squeeze in the juice from half. Mix to combine. The sauce should be thick but drizzle-able; if it's too thick, add water a small splash at a time until it thins out (or more lemon juice if you like).

Place the salmon, skin side down, onto lined baking sheet. Pat it dry with a paper towel. Spread a heaping spoonful (about 3 tablespoons) of the mustard sauce in a thin layer all over the salmon.

Roast the salmon until it is just barely cooked through, still incredibly moist, and flakes easily with a fork when you remove it (135ºF when checked with an instant read thermometer), 35 to 50 minutes depending on the shape of your salmon.

Let the salmon rest for 5 minutes, during which time it will come up another 5ºF.

Drizzle the remaining sauce over the salmon or pass it on the side, garnish with the fresh dill sprigs, then serve.

Didn’t have dill or capers so used herbes de provence. Took about 35 minutes. All enjoyed and timed well with the roasted cauliflower.

I would love to rate it higher... bit the salmon was so dry. It was in the oven for 40 minutes... and when I took it out I immediately knew it was overcooked. I still ate it and loved the flavor. Hubby powered through. I will try again but use normal cooking temp and time.

Easy to prepare but I found the taste too salty.

Reeeally delicious. I didnt have lemon so used extra caper brine, and only had dried dill instead of fresh. But the point is, even without everything, this is great!!

I made this today for Christmas dinner and wow was it a crowd pleaser. The salmon came out tender, tangy and delicious. The sauce was -chef kiss-. Will be making this again, for sure.
