Rather than serving these Asian Chicken Lettuce Wraps as an appetizer, everything is served over a great big chopped salad! Light, quick and easy to make!

Asian Lettuce Wrap Chicken Chopped Salad

rice vinegar

grapeseed or canola oil

sesame oil

honey

ginger

garlic (minced)

kosher salt and pepper

hoisin sauce*

Sriracha sauce

soy sauce*

cooking spray

chicken

water chestnuts

unsalted cashews

scallions (thinly sliced)

Boston lettuce (chopped)

romaine lettuce heart (chopped)

carrots (grated)

For the dressing: In a small bowl, whisk together the vinegar, oils, honey, ginger, garlic, and salt and pepper to taste. Set the dressing aside.

For the chicken: In a medium bowl, whisk together the hoisin, vinegar, Sriracha, soy sauce, and ginger. Set aside.

Heat a medium skillet over medium-high heat. Spray with cooking spray then add the chicken and cook until browned and cooked through, 8 to 10 minutes.

Add the water chestnuts and cashews to the pan. Pour the reserved hoisin mixture on top and cook for 1 to 2 minutes to heat through. Stir in the scallions. Remove from the heat and set aside.

For the salad: In a large salad bowl, combine both of the lettuces and the carrots. Toss the salad with the dressing and divide in 4 bowls. Top each with 3/4 cup chicken mixture.

Serve immediately.

Asian Chicken Lettuce Wrap Chopped Salad

Sounds pretty basic but this Asian-style stir-fry tastes amazingly delicious! I can’t wait for you to try it. The ginger, garlic, and red pepper flakes add a little kick. Each serving has 9 grams of fiber since this dish is loaded with broccoli, broccoli slaw, and a variety of other vegetables. No noodles needed. The broccoli slaw mimics the texture of noodles. In fact, no rice needed either. 

Skinny Chicken and Broccoli Stir-Fry

Cooking spray, I

olive oil

chicken breasts,

lemon

broccoli

snap peas

red bell pepper, chopped

scallions, sliced

water

fresh garlic, chopped

red pepper flakes

soy sauce (for gluten-free, use Tamari soy sauce)

sugar

rice vinegar, see shopping tips

Coat a large nonstick pan or wok with cooking spray.  Add 1 teaspoon oil.  Add chicken and squeeze the juice of 1 lemon over the top. Cook over medium-high heat, stirring often until chicken is completely cooked, about 4 minutes. Remove from pan and add to a plate.  Set aside.

Coat the same nonstick pan with more cooking spray.  Heat 2 teaspoons oil in pan.  Add all the veggies and water.  Stir-fry for about 3 minutes until broccoli softens.  Stir in ginger, garlic, and red pepper flakes. Continue to cook and stir-fry for 1 minute. Add back chicken, add soy sauce, brown sugar, and vinegar. Reduce heat and simmer, stirring frequently, for about 5 minutes.

Step 1

Place rice and 125ml water in a small saucepan over high heat. Bring to the boil. Reduce heat and simmer, covered, for 25 minutes or until rice is just tender.

Step 2

Preheat oven to 180C or 160C fan-forced. Line a 26cm x 16cm (base measurement) slab tin with baking paper, allowing paper to hang over the 2 long sides. Place spinach in a large bowl. Add enough boiling water to cover. Soak for 30 seconds or until just wilted. Drain well.

Step 3

Whisk eggs in a large bowl until combined. Season with salt and pepper. Stir in rice, spinach, carrot and zucchini. Pour into prepared tin and distribute evenly. Dollop cottage cheese over the top. Use the back of a spoon to lightly press cheese into egg mixture. Bake for 30–35 minutes or until golden and set.

Step 4

Cut into slices and serve topped with tomatoes and mint.

It tastes just as good as any high-fat dressing but with a fraction of the fat and calories. In the past, I’ve shared my skinny ranch dressing recipe but it called for many dry ingredients. In addition, you needed xanthan gum to thicken it. I got back in the kitchen and created a new, easier, and much skinnier recipe. Each 2 tablespoons serving has just 30 calories, 2 grams of fat. So delicious as a dressing, dip, topping for potatoes, and more. The possibilities are endless. I always have some on hand in my refrigerator. It’s a must-try!!!

The BEST Skinny Ranch Dressing (3 ingredients)

buttermilk

Best Foods (Hellmans) light mayonnaise (see shopping tips)

In a medium bowl, add all ingredients. Using a whisk, mix together until completely blended.

Refrigerate at least 30 minutes to thicken, before using. To thicken quicker, place in freezer and set timer for 15 minutes. Store dressing in the refrigerator for at least 2-3 weeks. The shelf life depends on the expiration date of your buttermilk.

Of course, I modified to my preferences.  However, this is a fantastic recipe!  I just added more ranch mix, granulated garlic, and pepper.  My preferences, so the base recipe works very well.  My recommendation is to add whatever you like and taste as you go.
