Traditional pickled herring smørrebrød:

rye bread

Danish remoulade (or butter)

pickled herrings, depending

onion

gherkins

fresh dill or thyme

cayenne pepper

Smoked salmon and cucumber smørrebrød:

mayonnaise

salmon

cucumber

lemon

cayenne pepper, optional

Salami smørrebrød:

butter

salami

tomato

parsley

Avocado and egg smørrebrød:

½ avocado (or a very small whole one)

lemon juice

salt

coriander parsley leaves

black pepper, smoked would be great

Havarti cheese and tomato smørrebrød:

lettuce leaves

Havarti (or another sliced cheese you like)

salt and black pepper

Roasted Salmon Smørrebrød with Creamy Mustard Dill Sauce and Pickled Beets

For the Smørrebrød:

this slices of dense rye bread

Butter

salt and pepper

salmon filets (skin-on is fine)

Olive or canola oil

watercress (baby arugula or spinach would be a fine substitute)

Creamy Mustard Dill Sauce, recipe follows

Spicy Pickled Beets,

dill,

For the Creamy Mustard Dill Sauce:

olive oil or canola oil

shallot,

dry white wine

dijon mustard

heavy cream

water

dill

Preheat oven to 450 degrees.  Line a baking sheet with aluminum foil (for easy clean-up) and brush with olive or canola oil.  Don’t bother to brush the pan with oil if you are using skin-on filets. Set aside.

Place salmon filets, skin side down, on the prepared baking sheet.  Drizzle with olive oil and season with salt and pepper. Transfer to oven and roast until done to your liking.  (I like mine just cooked all the way through which will take about 10-12 minutes).

Meanwhile, make the Creamy Mustard Dill Sauce:  Heat oil in small saucepan over medium heat until shimmering.  Add shallot, reduce heat to medium-low and sauté until soft, 1-2 minutes.

Add white wine and simmer until reduced by half, about 2 minutes.

Add mustard, cream and water.  Simmer until thickened slightly, 2-3 minutes.

Arrange bread slices on your work surface.  Butter the bread.

Add a handful of watercress to each slice of bread.  

Remove salmon from the baking sheet, leaving the skin behind if necessary by coming between the salmon and the skin with a thin metal spatula.  It should come up quite easily. Place a salmon filet on top of watercress on each slice of bread.

Artfully arrange a generous dollop of mustard sauce and a spoonful of pickled beets around or on top of the salmon.  Garnish with fresh dill. Serve immediately.

An easy overnight version of classic Danish rye bread with no sourdough.  

Easy Overnight Danish Rye (Rugbrød)

½ cups 7 grain hot cereal mix

sunflower seeds

pumpkin seeds

flax seeds

dark rye flour

bread flour

yeast

molasses

Stand mixer

13 x 4 inch pullman loaf pan with lid

For the Soaker:  Combine all the ingredients for the soaker in a medium bowl.  Cover with plastic wrap and let sit at room temperature overnight, approximately 8-12 hours.

For the Dough:  Combine both flours, yeast and water in a separate bowl.  Stir to combine as best you can (mixture will be thick), and then knead briefly with your hands until you have a cohesive mixture.  Dough will be very thick and clay-like in texture. Cover with plastic wrap and let sit at room temperature overnight, about 8-12 hours.

Grease a 13 x 4 inch pullman loaf pan with butter and dust with rye flour, including the lid.  Set aside. Combine the soaker, flour mixture, salt and molasses in the bowl of a stand mixer. Fit mixer with paddle attachment and mix on low speed for 2-3 minutes until everything is thoroughly combined, scraping down the sides of the bowl from time to time.  Increase speed to medium and mix for an additional 2-3 minutes, stopping to occasionally scrape down the sides of the bowl. Mixture will be quite sticky.

Transfer the dough to the prepared pan.  Smooth out the top and sift a thin layer of rye flour over the surface of the dough.  Place lid on pan and let the dough rise for 1½ -3 hours at room temperature or until it is about ½ inch from the top of the pan.  The time that it takes for your dough to rise will largely depend on the temperature of the dough and your kitchen.

Meanwhile, preheat oven to 500 degrees.  Bake loaf with the lid on for 15 minutes.  Reduce temperature to 400 degrees and continue to bake, covered, for an additional 15 minutes.  Remove pan from oven and carefully slide the lid off. Reduce temperature to 325 degrees and bake, uncovered, for an additional 45 minutes.  Remove from the oven and immediately turn loaf out onto a metal cooling rack set inside a rimmed baking sheet.  Return bread to the oven for an additional 10 minutes.  Remove from the oven and allow the bread to cool completely before slicing, at least 3 hours. Rye bread is even better a day after baking.  If you can wait until the following day, let the bread sit uncovered at room temperature overnight before slicing.  The bread will keep at room temperature for 3 days loosely wrapped in foil. Freeze for longer storage.

Roasted Beet Hummus Smørrebrød with Avocado and Pickled Onions

Roasted Beet Hummus

avocados (sliced)

olive oil

Quick Pickled Onions (recipe follows)

Sprouts

red onion (sliced thin)

red wine vinegar

white vinegar

¼ teaspoon chile pepper flakes

sugar

Make the Quick Pickled Onions.  Place the sliced red onion in a medium bowl or quart-size Mason jar.  Heat remaining ingredients over medium until mixture just comes to a boil.  Pour over onions. Let sit at room temperature for at least 30 minutes. (Quick Pickled Onions keep in the fridge for up to a week).

Assemble the Smørrebrød.  Transfer sliced bread to a clean work surface.  Spread the surface of each slice of bread with a generous layer of Roasted Beet Hummus.  Top with sliced avocado and a drizzle of oil. Season with salt and pepper. Garnish with Quick Pickled Onions and sprouts or microgreens, if desired.  Serve.

Whip up this simple lunch with radish and gruyère on toasted rye bread as an alternative to sandwiches. You can eat it 'al desko' or indeed, al fresco

Take 5-6 radishes still with their tops on, and slice the leaves and the radishes thinly, keeping both separate. In a small bowl, mix together 2 tbsp quark, 1 tbsp grated gruyère and the radish leaves, then season well. Spread 2 slices of toasted rye bread with butter, then spread the yogurt mixture on top. Garnish with the radish slices, a good grating of black pepper, a spritz of lemon juice and a few drops of olive oil.
