<p>This Spicy Peanut Chicken Soba Noodle Salad is loaded with flavor and tossed with a super quick spicy peanut sauce. Definitely a favorite! YUM!</p>

Spicy Peanut Chicken Soba Noodle Salad

chicken breasts

red, green, and yellow bell pepper

8.8 (250 grams) soba noodles

cilantro

peanut butter

water

soy sauce

sesame oil

honey

white vinegar

garlic

Bring a large pot of water to boil. Place the chicken in the water and reduce to a simmer. Cover and cook for 15 minutes or until chicken is no longer pink. When chicken is cool enough to handle, shred with your hands or with two forks. Set aside. Meanwhile, cut the bell peppers into very thin strips &#8211; it makes the salad extra awesome if they are thin and easy to wrap your fork around, almost like a little noodle.

Puree all the ingredients for the Spicy Peanut Sauce in a food processor, adding the peanuts last so you can control how smooth the sauce will be (I like to leave some pieces of crushed peanut in the sauce).

Cook the soba noodles according to package directions. Drain and toss with the chicken, veggies, fresh cilantro, and Spicy Peanut Sauce. Serve hot or cold &#8211; but I recommend cold! Yummay.

Also try the purple thai basil.  Excellent flavor, works well with the peanut taste.

We made a few mistakes when buying our first houses.  Our last house didn't have a mailbox.  Yeah, we moved in and watched the mailman drive by and never stop.  Doh.

In our current house, since it's old, it has a water pump to regulate pressure.  Super noisy. Next time I buy a house, I will turn on the sink and listen for a noise!

Spicy Peanut Noodle Soba Salad

Soba Noodle Salad with Smoked Salmon ( or tofu) , Scallions and Cucumber and a simple sesame dressing.

soba noodles

Cups cucumber

½ C sliced green onion

oz Smoked Salmon

T toasted sesame seeds

tsp toasted sesame oil

tsp tamari, soy sauce

tsp rice wine vinegar

Soba Noodle Salad with Smoked Salmon ( or tofu)  and Cucumber

Cook soba noodles, according to directions, about 4 minutes in boiling salted water. Drain, rinse with cold water, place in medium bowl and drizzle with sesame oil, soy and vinegar. Toss to coat.

Add cucumber, scallions and sesame seeds.

Divide among two bowls, and top with smoked salmon or smoked tofu.

I made this with lox and cooked fresh salmon until I found smoked salmon, as well as smoked tofu. I can get the smoked salmon frozen so I've got a few packages ready. I'll be making it for lunch and be able to have it again tomorrow.  It's easy to make and so delicious.

Amazing and so quick and easy to make!  Used smoked salmon and it was fantastic.  Will definitely make again!

Soba Noodle Salad with Spicy Peanut Sauce

cucumber, spiralized

cabbage, shredded

carrot,

green onions, chopped

sesame seeds

tbsp tamari (can sub soy sauce)

tbsp rice vinegar (can sub lime juice)

maple syrup (can sub agave, honey)

tsp sesame oil

tsp sriracha

Cook the noodles according to package directions.

While the noodles cook, prepare the peanut sauce by mixing all the sauce ingredients together. 

Once the noodles are cooked, rinse them under room temperature water to slightly cool them down slightly, then add them to a mixing bowl with the rest of the salad ingredients. 

Toss the soba noodle salad and peanut sauce together until combined.

Optionally top with some extra sesame seeds, green onions and cilantro.

We didn't have soba noodles or red cabbage on hand so used brown rice vermicelli and green cabbage instead. Even with the modifications, it still turned out very yummy!

This light and refreshing cold soba noodle salad takes very little time to make. The noodles cook in under 5 minutes. You&#39;ll love how quick and easy it is to make. Ready in under 20 minutes!

Cold Soba Noodle Salad (Buckwheat Noodles)

soba noodles (also known as buckwheat noodles)

red cabbage

matchstick carrots

scallions, thinly sliced (plus more for garnish)

Sesame seeds (for garnish)

rice vinegar

vegetable or canola oil

honey (to taste)

ginger

Make the dressing: In a mason jar, combine all the Ginger Soy Dressing ingredients. Cover with lid and shake vigorously until evenly combined. Adjust to taste if needed. Set aside.

Cook soba noodles according to package directions, until al dente, about 4-5 minutes. There&#39;s no need to add salt to the water. To be sure, test it after 3-4 minutes to check for doneness. When ready, immediately drain and rinse with very cold water to stop the cooking process. This will prevent the noodles from getting too soft.

In a large bowl, toss the cooked soba noodles with the cilantro, cabbage, carrots, scallions, and the prepared dressing. Garnish with sesame seeds, more sliced scallions, and sliced seasoned seaweed. Serve immediately. Enjoy!

Cold Soba Noodles with Chicken and Peanut Sauce

Chili Crisp Cucumber Soba Noodle Salad

persian cucumbers or mini cucumbers, thinly mandolin (about 120 g)

roasted cashews or roasted peanuts, roughly chopped (optional)

lime juice

tsp chili crisp**

tsp honey (sub with maple syrup if vegan)

tsp white miso paste

Boil the noodles and blanch the edamame

Start by boiling the noodles. Add the noodles to a pot of boiling water along with a large pinch of salt, and cook until soft but still chewy. About 1 minute before the noodles are done, add in the frozen edamame to blanch them. Drain and rinse the noodles and edamame in cold water and set aside to drain. 

Prep the sauce

In parallel, while the noodles cook, prep the dressing. Add all the ingredients to a small bowl and whisk together. Alternatively, you can whisk the dressing in the same bowl you’ll use for the salad to minimize dishes. 

Prep the veggies

Lastly, mandoline the cucumbers on the thinnest setting, and add to a large bowl along with the scallions and cilantro.

Toss and serve

Add the drained noodles and edamame, pour over the dressing, and toss together. Adjust for salt as needed, and top with a generous amount of toasted sesame seeds.

It’s so good! I have had it for two nights in a row and absolutely delicious. Not hard to make and easy to bulk for the week! 

This is so delicious! Not really a meal on its own, but when paired with grilled salmon was delicious and very filling!!

I never comment on recipes, but this was so good! So refreshing and light, but filling. Exactly what I was craving. 
I added some tempeh for some extra protein too. 
Definitely adding this to my meal rotation.

Tripled the recipe, used fresh edamame and a six pack of mini cucumbers from Trader Joe's. My only feedback was that much chili crisp was a little spicy (I used Momofuku - maybe it's spicier) - I'll use half next time and leave it out to add "to taste"
