Mr. Softee-Style Vanilla Bean Soft-Serve Recipe

Pour about 1/4 cup half and half in one small bowl and 2 tablespoons in another. Use a fork to whisk cornstarch into the first bowl until no lumps remain, and sprinkle gelatin in second bowl. Add remaining half and half to a saucepan along with vanilla bean, sugar, and salt. Bring to a boil, then turn off heat, cover, and let steep for one hour.

Remove vanilla bean (reserving for another use) and whisk in cornstarch slurry. Heat dairy on medium heat, whisking frequently, until a custard forms and a swiped finger leaves a clean line. Turn off heat, taste for seasoning, then stir in Scotch and gelatin mixture. Whisk until gelatin fully dissolves. Transfer to an airtight container to chill, four hours to overnight. The custard will set into a wobbly gel.

Churn in an ice cream maker until ice cream has the texture of soft serve and is not at all runny. Eat immediately, or chill in freezer in an airtight container. To regain soft serve texture, let ice cream thaw to the verge of melting after freezing.

(700 grams) thick Greek-style yoghurt

(700 grams) coconut yoghurt

thickened cream

(360 grams) pure icing sugar, sifted

(45 grams) cacao powder (from health food stores and some supermarkets)

(125 milliliters) maple syrup

tbs cacao powder

savoiardi (sponge fingers)

(70 grams) shredded coconut

*Please note that making this ice cream takes several hours or can be spanned over a day. For a faster vanilla ice cream, use this recipe*

In a medium/large heat-proof bowl, whisk together the olive oil and egg yolks until fully combined.

⁣In a medium saucepan, combine the milk, heavy cream, honey, brown sugar, vanilla and salt over medium-low heat. Bring to a scald, whisking frequently until the sugar is dissolved - just a few minutes.

Slowly pour the hot ice cream mix into the bowl with the egg yolks in a steady stream, whisking constantly until combined. Now the mix needs to be cooled to at least room temperature. You can put it in the freezer for about an hour or put it in the fridge overnight.

Pour the mix into your ice cream maker through a fine-mesh strainer and follow the instructions for your model until you get a soft serve-like consistency. Transfer to a bowl and freeze until firm (typically 3-4 hours). Serve with a drizzle of olive oil and flaky sea salt.

(240 grams) cashew milk (or almond milk)

(120 grams) full-fat coconut milk (can sub dairy-free yogurt

(40 grams) chocolate protein powder

tsp vanilla extract

Pour into a Ninja Creami container and freeze overnight.

Process on the &#8220;light ice cream&#8221; setting, it will be powdery at this point.

Add a splash of milk (preferably coconut) and &#8220;re-spin&#8221; once or twice as needed.

Add mix-ins of choice, and process on the &#8220;mix-in&#8221; setting. Enjoy!

So delicious! I don’t have a creami but took it to my son’s place and used theirs for the first time! They’re not vegan but loved it too! Easy homemade froyo! This Blueberry Frozen Yogurt Recipe is a healthy summer snack made in the blender with 5 ingredients. Optionally swirled for extra YUM!

Vegan Blueberry Frozen Yogurt Recipe

(360 grams) unsweetened plain non-dairy yogurt*

(140 grams) frozen blueberries

maple syrup (optional)

Non-dairy milk (if needed)**

Spoon the yogurt into an ice cube tray (or mini muffin pan) and freeze overnight.

Blend the yogurt ice cubes with the frozen blueberries, vanilla, maple syrup (if using) and salt until creamy. You will need to use the tamper. Add a splash of non-dairy milk if needed.

Serve immediately or transfer to a piping bag and pipe swirls into a cup or cone.

Turned out even better than I would have believed...the maple syrup tones down the tartness just right. Had to use the coconut cream as you made it sound to good to pass it up! Recommend a non-dairy whip on top! Yum!!
