This is how you make the perfect naturally fermented pasta with sourdough. It's a slow recipe that takes some time but will reward you with delicious food.

4 Week Naturally fermented Pasta (with sourdough)

Bread flour

Your dough should increase by around 50% in size

Take your dough and place it in the fridge for a long time

After 1 day up to 4 weeks take your pasta from the fridge and shape it

Cook in salted boiling water for 2 minutes

This easy homemade sourdough pasta couldn’t be easier. You only need 3 ingredients and can use an active sourdough starter or discard. Whip up a quick version or long ferment for more health benefits and better digestibility.

Fresh Homemade Sourdough Pasta Dough

250 g All Purpose Flour

Pour your flour on the counter and make a well.

Add your sourdough starter and eggs.

Using a fork, gently beat the eggs into the flour, by pulling the flour from the outsides.

Continue to do this until the dough becomes shaggy.  Keep adding flour until it is no longer sticky.

Continue to knead this by hand until the dough is smooth and elastic.

Wrap your dough in plastic wrap and let is sit for 30 minutes to rest, or leave in the fridge overnight (12 hours) to bulk ferment. This will give you all those amazing sourdough benefits.

Roll out and shape the dough as desired. You can use the dough immediately or let it air dry completely(about 12-24 hours) and then store in an airtight container.

To cook pasta, bring a large pot of water to a boil. Add a generous amount of salt to the water and add the pasta. If fresh pasta, it should only take between 3-5 minutes to cook. If dried, slightly longer. Cook as you would any other type of pasta.

This Homemade Sourdough Pasta is easy and delicious. No need to throw out your sourdough discard, instead make some pasta. Easy and tasty.

Homemade Sourdough Pasta

sourdough starter (unfed/discard)

semolina flour

bread flour

salt

In the stand up mixer (with the flat beaters) or large bowl mix together the sourdough starter and eggs until combined. Add the flour and salt and with the dough hook knead until smooth. This can also be done by hand.

Wrap the dough in plastic and refrigerate 8-12 hours.

Remove from the fridge and let come to room temperature. Divide the dough in 4 parts and roll or put through a machine until it is almost transparent about 2mm in thickness.

Lightly flour the dough, then fold in 3 parts like an envelope. With a sharp knife cut the strips into desired thickness or shapes.

Dust the board with some flour and place the pasta on top, sprinkle it with a little flour and cover with a clean tea towel, to rest for approximately 30-60 minutes before cooking, be sure it is away from all sources of heat and humidity.
