A simple ,easy and flavorful vegetable biryani recipe made in the Instant pot pressure cooker with layers of spiced vegetables ,warm spices ,herbs like mint and cilantro, fried onions and basmati rice.

Easy Vegetable Biryani (Instant Pot &amp; Stove Top)

thick yogurt (hung curd) ((thick coconut milk

ginger garlic paste

carrot (diced ,(about 1 cup))

green beans (cut

cauliflower (cut in large florets about 1.5-2 inch)

paneer (cubed into ½ inch cubes)

turmeric powder

red chilli powder

biryani masala powder

lemon juice

salt (adjust

bay leaf

cinnamon stick

cloves

cardamom

star anise

mace

shah jeera (cumin seeds)

basmati rice (rinsed & soaked for 20 minutes)

ghee ((use oil

onion (thinly sliced (about 1 cup))

mint leaves (pudina) (chopped)

coriander leaves(cilantro) ( finely chopped)

onions

milk ((use water

saffron(kesar) (few strands)

ghee (optional)

water

Rinse the basmati rice and soak for 20 minutes. Drain and keep aside.

Add warmed milk in a bowl and soak the saffron in it.Keep aside.

Pre Preparation:

Take yogurt(curd) ,ginger-garlic paste, turmeric powder, red chilli powder, biryani masala powder, lemon juice ,salt in a large mixing bowl.Mix well.Vegans can use thick coconut milk instead of yogurt.

Now add the chopped vegetables ,mix very well and marinate for at-least 15 to 20 minutes.

Marinating the Vegetables:

Press SAUTE mode on Instant Pot. Add ghee or oil in to the POT .Add all the whole spices and saute for 30 seconds.

Add in the sliced onions and saute till the onions caramelize or turn light golden brown.

Add the marinated vegetables into the pot.Mix everything well and saute for 1 minute.

Top with half of the coriander leaves, mint leaves and fried onions. Do not mix.

Spread the soaked basmati rice evenly over the veggies.

Now again top with leftover coriander leaves, mint leaves and fried onions.Sprinkle saffron milk on top of the rice.Do not mix.

Add water gently all around along the sides of the pot. Don’t add water in the center.Make sure rice is just immersed under water.Do not mix the ingredients.Also add 1 tablespoon of ghee over the rice,this is optional.

Press &quot;Warm / Cancel&quot; button and then select &quot;MANUAL/PRESSURE COOK&quot; (LOW Pressure) Adjust the time to 6 minutes and set the pressure selection at &#039;low&#039;.

After the pot beeps ,Quick Pressure Release to stop overcooking the rice and the vegetables

Lastly ,Open the pot and fluff up the rice.Garnish with some more fried onions and coriander leaves.Also take out the steel insert ,prevents the rice at the bottom from over cooking.Let the biryani rest for another 5 minutes.Serve the Vegetable Biryani with your favorite raita, salad or kurma.

Instant Pot Method:

Follow the same steps as Instant Pot .Close the pressure cooker lid and cook on lowest flame for about 20 to 25 minutes. Even if the pressure cooker whistles, then its fine.

Stovetop Pressure Cooker Method:

Kerala Chicken Roast Recipe

For the marination:

Chicken

Turmeric powder

Chilli powder

Coriander powder

Vinegar/lemon juice

Green chillies

Salt

For roasting:

Tomato (pureed)

Green chillies (slit)

Curry leaves

Garam masala powder

Pepper powder

Lemon (juiced)

Clean and cut the chicken into medium sized pieces. Make a paste of all the ingredients under marination.

Marinate the chicken pieces with this paste and keep aside for an hour.

Cut onions into very thin slices and fry in hot oil. Drain them and keep aside.

Fry the chicken pieces in the same oil until almost done. Keep the pan covered so that the chicken does not get browned, but is cooked inside. Drain them and keep aside.

Heat 2 tbsp of oil in another pan (You can use the same oil in which we fried the chicken pieces. This will enhance the flavour). Add slit green chillies and curry leaves. Saute for 1 minute.

Add the tomato paste to this and saute for 1 minute. Now add the prepared chicken &amp; roast until it is dry.

Make sure that all the chicken pieces are well coated with the tomato paste.

Sprinkle garam masala &amp; pepper powder and mix well.

Add lemon juice and mix well. Check for salt. Add a little if needed. Now add the fried onions and mix well.

Instant Masala Dosa – Crispy & Delicious

2-3 Boiled Potato, medium size, peeled

tbsp Coconut Oil, oil

tsp Mustard Seeds/Rai,

tsp Chana Dal,

tsp Dhuli Urad Dal,

Curry Leaves,

2-4 Green Chilli, chopped

Onion, chopped

Ginger, grated

Salt,

tsp Turmeric Powder,

tbsp Fresh Coriander, chopped

Sooji,

tbsp Poha/Rice Flakes, or rice flour

tbsp Whole Wheat Flour,

Curd,

Water,

tsp Sugar,

tsp Baking Soda,

Cooking Oil,

Potato Masala-step-1

Heat some oil in a pan and then add mustard seeds, chana dal, urad dal. Let them sizzle for a few seconds.

Potato Masala-step-2

Add onion, green chili, and ginger. Saute for a minute or two till the onions are translucent. Do not brown them.

Add turmeric powder and mix it well.

Mash potatoes and add them to the pan. Add salt and mix everything well.

Switch off the flame. Add chopped coriander and mix. Set aside.

Dosa Batter-step-1

In a mixer grinder, add sooji and poha/rice flakes. Grind them first into a fine powder.

Transfer it to a bowl and add whole wheat flour, salt, and sugar to it. Just mix it well.

Add curd and whisk everything well. It will be difficult to whisk. Then add water 1/4 Cup at a time. Keep whisking.

Add more water and whisk till you get a lump-free, medium consistency batter.

Once you are ready to make dosa, add baking soda and whisk it well.

Sprinkle some water and wipe it off. It reduces the temperature of the hot pan.

Take around half a ladle of the batter and pour it at the center of the pan. Spread it in a circular motion using the back of the ladle.

Add around a teaspoon of cooking oil over it.

Once the dosa starts to turn golden brown, scrape it off from the sides first. Put the potato masala on one half of the dosa and spread it a little. Fold it in half and serve hot.

To make the next dosa, again sprinkle some water on the pan, wipe it off, and then proceed further. You need to repeat this step with every dosa you make.

Kollu Masala Dosa Recipe - High Protein Horse Gram Dosa Recipe

To make Horse Gram Masala Dosa Recipe, first clean and wash the rice, horse gram and fenugreek seeds. Soak them together for 5 hours in water.

Grind the rice, horse gram, fenugreek seeds along with just a little water until you get a thick batter. Place the kollu dosa batter in a deep vessel, cover it and allow it ferment for 8-10 hours or overnight.

The next step is to make the masala for the Kollu Masala Dosa.

In a pan, add 1 tablespoon of cooking oil. Once the oil is hot, temper with mustard seed, curry leaves and fry the onions and green chilli.

Once the onions are soft, add the turmeric powder and chili powder, boiled potato cubes. Roughly the boiled potato cubes and mix all the ingredients well. Add salt, give it all a good stir and turn off the flame. Garnish with chopped coriander leaves and keep the aloo masala aside.

The final step is to make the kollu dosa and stuff it with the potato masala.

To prepare the kollu dosa, mix the fermented batter well with salt and water (if required) and bring it to a smooth and yet spreading consistency.

Heat the dosa tawa on a medium flame. Add a teaspoon of oil and spread it on the dosa tawa.

Pour a cup of batter on the tawa and spread the batter evenly into a circle. Drizzle, oil around the kollu dosa and cook on medium heat until the dosa is browned and crisp.

Once you see the dosa has slightly browned at the bottom, flip the dosa upside down and cook the other side of the dosa.

Once done, flip the Kollu dosa once again and add the potato masala stuffing in the centre of the dosa and fold the dosa in half.

Serve Kollu Dosa along with Coconut chutney and Vengaya Sambar for an ultimate South Indian Breakfast.
