Grandma’s Real Southern Baked Beans

Start by preheating the oven to 325 degrees. Then heat a large skillet over medium-high heat. Add the bacon to the hot skillet and fry the bacon until it is almost crisp. Transfer the bacon to a plate and cut the slices in half.

DO NOT pour out the bacon grease. In the same skillet you used for the bacon, fry the onions, stirring them around in the bacon grease until tender, about 3 minutes. Drain off most of the fat from the onions and set the skillet aside.

In a large mixing bowl, add the cans of great northern beans and the pork and beans. To the beans add the cooked onion and bacon, and the remaining ingredients. Stir to combine.

Pour the bean mixture into a very large baking dish, or two 9 x 13 foil baking pans. Place the pans on the center rack of the oven and bake for 1 -1/2 hours. Cool the beans slightly before serving.

These Sweet and Spicy Baked Beans are made from scratch, using dried beans! They&#039;re ready in about 3 hours and can be made with or without meat!

Sweet and Spicy Baked Beans

Soak beans overnight.

Prior to cooking, change the water and transfer beans to a large stockpot. Top the beans off with enough water so that they are covered. Add salt to the pot and bring the beans to a boil. Cover the pot and let the beans cook for 1 full hour.

While the beans are cooking on the stove, preheat your oven to 300 degrees F and combine the sauce ingredients (listed above) together in a small bowl. Set the sauce aside until ready to use.

Drain the beans. Make sure to reserve the cooking water. There should be about 4 cups of water leftover from the beans. It's ok if it doesn't equal 4 cups exactly, you can top it off with tap water to bring it to 4 cups.

In a large dutch oven, heat the bacon grease or butter over a medium flame and add the onions, bell peppers and jalapeños. Saute them for 1-2 minutes, until the onions are clear. Add the sauce and 2 cups of the reserved water from the beans, stir and let everything simmer.

Add the drained beans to the dutch oven and stir until the beans are fully coated in sauce. Top the beans and sauce off with the remaining 2 cups of cooking water, stir one more time, and cover the dutch oven.

Transfer the dutch oven to the oven and bake for 2 hours. Stir the beans every 30-40 minutes or so.  The beans should remain moist but you can add a small amount of boiling water to keep the beans from drying out, if needed. Once the 2 hours is up, uncover the beans and bake them for another 30 minutes.

Let the beans cool slightly before serving.

Homemade Baked Beans with Bacon (Southern)

Heat oil over high heat (can skip oil if bacon is super fatty). Add bacon and cook for 2 minutes.

Add onion and garlic. Cook for 3 minutes until onion and bacon are golden.

Add remaining ingredients. Stir, bring to simmer, then place lid on.

Then either turn down heat to medium low (simmering gently) and cook on the stove for 1 hour, stirring every now and then so the bottom doesn&#039;t catch. OR bake at 160°C/325°F for 60 minutes.

SLOW COOKER option: Reduce water to 1/4 cup, transfer to slow cooker and cook for 6 hours on low. 

The sauce should be thickened (cook with lid off for a bit if not thick enough) and glossy. Adjust salt and pepper to taste at the end. See notes for serving suggestions!

Preheat oven to 375 degrees.

Add bacon to a large pot. Turn heat to medium and cook, stirring often until crisp. Remove to a plate. Remove only some of the excess grease. Add onion to pan and sauté for 4 minutes. Add bell pepper and garlic and cook for 2 more minutes. Add remaining ingredients and bacon to stir to combine. Taste and add additional salt and pepper, if needed.

Pour mixture into a 9x13 baking pan and bake, covered with foil, for one hour (or up to 2 hours, if you want them thicker consistency). Uncover and bake for 10 more minutes. Allow to cool for at least 15 minutes before serving, for the sauce to thicken as it cools.

Store leftovers in the fridge for up to 1 week.

Southern-Style Homemade Baked Beans

Preheat your oven to 325&#xB0;F (165&#xB0;C). Drain the soaked beans and rinse them thoroughly under cold water. Set aside.

In a large Dutch oven or oven-safe pot, cook the diced bacon over medium heat until it's crispy and the fat has rendered, about 5-7 minutes. Remove half of the bacon with a slotted spoon and set aside for later use as a topping.

Add the chopped onion to the pot with the remaining bacon and bacon fat. Cook over medium heat, stirring occasionally, until the onions are soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add the drained beans to the pot along with 4 cups of water. Bring the mixture to a simmer over medium-high heat. Once simmering, reduce the heat to low and let it cook for about 45 minutes, or until the beans are just beginning to soften.

In a separate bowl, whisk together the molasses, brown sugar, Dijon mustard, apple cider vinegar, and tomato sauce. Pour this mixture into the pot with the beans and stir to combine thoroughly.

Cover the pot and transfer it to the preheated oven. Bake for 2 hours, stirring once halfway through. After 2 hours, remove the lid and continue baking for an additional 30-45 minutes, or until the beans are tender and the sauce has thickened to your desired consistency.

Remove the pot from the oven and let it stand for 10-15 minutes to allow the sauce to thicken further. Taste and adjust seasoning with salt and pepper if needed.

Sprinkle the reserved crispy bacon over the top of the beans before serving. Enjoy your homemade Southern-style baked beans hot as a delicious side dish or main course!
