Salmon Patties

pink salmon

onion (chopped)

eggs

breadcrumbs

lemon juice

salt

ground pepper

Drain the juice off the can of salmon....

Drain the juice off the can of salmon. (Save in case the juice is needed later)

Check for bones.

Add the chopped onions, eggs, breadcrumbs, lemon juice,...

Mix together and shape into patties.

Fry in vegetable oil for approximately five minutes...

Southern Salmon Patties

This is an old-fashioned soul food recipe for southern salmon croquettes that is easy to make and loaded with flavor. Salmon croquettes are a go-to dinner recipe in our home and they will quickly become a favorite in yours!

Southern Salmon Croquettes

yellow cornmeal

all-purpose flour

1, 14.75 ounce can pink salmon (bones removed)

red bell pepper

medium yellow onion (finely chopped)

Worcestershire sauce

garlic powder

onion powder

paprika (smoked

mustard powder

cayenne pepper

black pepper (to taste)

canola oil (or vegetable oil)

Heat the oil in a 10-inch cast-iron or heavy-bottomed skillet over medium-high heat.

Add the cornmeal, flour, salmon, bell pepper, onion, green onions, egg, Worcestershire sauce, salt, onion powder, garlic powder, paprika, mustard powder, cayenne, and black pepper to a medium mixing bowl. Use a wooden spoon or gloved hands to mix all the ingredients together until well combined.

Divide and shape the salmon mixture into 8 evenly sized patties with your hands. Place four patties into the hot oil and fry for 3-4 minutes on each side until golden brown.

Use a spatula to transfer the patties to a paper towel-lined plate and repeat the process with the remaining four croquettes. Serve the salmon croquettes immediately.

Crispy Southern Salmon Patties

salmon (2-6 ounces boneless skinless cans, drained)

cajun seasoning

saltine crackers (crushed)

egg (slightly beaten)

In large saute pan over medium high heat, saute onions in butter until golden brown, about 5 minutes. Remove from heat and set aside.

In large bowl, combine salmon, cajun seasoning, lemon juice, crushed saltines, salt, pepper, egg, and the cooked onions. Stir well to combine. Form into four patties.

Place cornmeal in shallow dish and coat each patty on both sides.

Using same pan you cooked the onions, heat the oil over medium high heat. Add the salmon patties and cook until crisp on both sides, about 5-8 minutes each side. Serve hot or cold.

Love this recipe! I added 1/2 tsp of parsley flakes, 1 tsp of red pepper flakes, and used Old Bay Seasoning instead of Cajun Seasoning.

I have been making and eating these since I was about 10 or 11.  STILL love them!!  I aways serve mine with mashed potatoes and baby green peas (fresh in the summertime).  A little ketchup or cocktail sauce on the patty and dig in!!  I don't bother to pick out the skin and bones ... my brother and I used to fight over them, after our mother told us they would make out bones and teeth strong!!

I tried to edit; 2 T. Chopped green onions!

I made these and they turned out fantastic! I modified the recipe by adding my personal touches; I added a quarter finely diced green pepper (not sautéed), 2 T. Chopped green bell pepper, panko crumbs instead of thé crackers, 2 eggs, coated in panko crumbs and fried in a cast iron skillet with 1 T. Olive oil and 1 T. Butter. Served with rémoulade sauce which provides a slightly sweet tangy finish.

I made this with fresh salmon and your Cajun seasoning recipe and they were terrific! I made them a lot smaller and served them with a Caesar Salad.

I love salmon patties and I can't wait to try this recipe because mine never turn out crispy!!
