HOMEMADE SOUTHERN SWEET TEA

Boil only ½ gallon of the water on stove.

Once water comes to a roiling boil, pour into one gallon pitcher.

Add 3 tea bags and 1/4 teaspoon of baking soda (you don’t need to stir).

Set your kitchen timer (I use my microwave) for 15 minutes.

After 15 minutes, take out tea bags.

Do not squish tea bags before taking them out, just let them drip for a minute.

If you do that, you’re likely to get some tea leaves in your drink.

Add sugar and stir.

Add the other ½ gallon of cold water to the pitcher and stir again.

Cool in fridge for several hours.

Southern Sweet Tea Recipe

Boil. Bring 1 quart of water to boil in a medium saucepan or tea kettle set over medium heat. Remove from the heat and add the tea bags. Allow to steep for about 15 minutes. Do not allow the tea to become cold.

Sweeten. In a gallon pitcher, add the sugar and pour in about 1/2 of the warm tea. Stir to dissolve the sugar. Pour in the remainder of the brewed tea, being careful not to drop in tea bags.

Stir. Add baking soda and stir to combine. If serving immediately baking soda may not be needed.

Serve. Fill the pitcher with cold water and serve over ice. Great with a wedge of lemon, lime, orange or a sprig of mint.

Boil. Bring 1 quart of to a boil in a medium saucepan set over medium heat. Remove the pan from the heat and drop in tea bags.

Sweeten. Add sugar to a 1-quart, wide-mouthed Mason jar or similar container. Remove the tea bags, carefully pressing the bags agains the side of the saucepan before discarding them. Pour a little of the tea over the sugar, stirring until completely dissolved. Pour in the remaining tea.

Stir. Stir in the baking soda and stir to combine.

Store. Tighten the lid of the container and store in the refrigerator for up to 2 weeks.

Serve. To serve a single serving, add 1/4 cup concentrate to a glass and top with ice and 3/4 cup water. Stir to combine. To serve a gallon, add all of the concentrate to a gallon pitcher and top with water. Stir to combine.

Black Folks Southern Sweet Tea

Cut the strings off the tea bags. (Careful not to cut the actual tea bag because you don’t want loose tea floating around.)

Open the Instant Pot lid and pour the water into the stainless steel inner pot. (Or, if using the stovetop, add all the ingredients to a large pot, steep/soak the tea bags in the boiling water for 10 minutes, and move on to step 8.)

Then stir in the sugar and baking soda and add the tea bags.

Close the Instant Pot lid (make sure the valve is up – in the position for sealing) and pressure cook on high for 4 minutes.

When the cooking time is finished, allow a natural pressure release for 15 minutes.

To open the Instant Pot lid, move the valve to ‘venting’ and manually release any remaining pressure, if applicable.

Using oven mitts, remove the inner pot from the Instant Pot burner.

Use a slotted spoon to remove the tea bags from the pot.

Pour the tea into a pitcher and optionally add lemon wedges or fresh mint.

Serve Black folks Southern sweet tea over ice, and enjoy!

Place one quart of water in a pan and bring to a boil. Add the tea bags.

Cover the pan, remove it from the heat and let it steep for 10-15 minutes.

Remove the tea bags and add the sugar.

Stir until completely dissolved.

Add the additional quart of cold water.

Crispy Cauliflower Fritter Bites + Savory Sautéed Collard Greens + Southern Style Sweet Tea

of Spicewalla Smoked Paprika

tsp Spicewalla Garlic Powder

neutral oil

collard green leaves

Tbs unsalted butter

apple cider vinegar

salt

black pepper

Cook Cauliflower

Wash cauliflower and have kids break it into bite-sized florets. 

Crack eggs into a small bowl. Add 1 Tbs water and 1 tsp salt, whisk again. Set aside.

Measure and combine flour, ground black pepper, the other 1 tsp salt, paprika, and garlic powder in a gallon-sized plastic Ziploc bag. Seal shut and shake shake shake quickly to mix the seasonings into the flour.

Pour the egg mixture into a separate gallon-sized plastic Ziploc bag. Add the cauliflower florets. Seal the bag tightly and have kids shake the bag to coat the cauliflower in egg.

Use a big slotted spoon or tongs, scoop out the cauliflower florets from the egg Ziploc and transfer to the flour Ziploc. Seal the bag tightly and shake to coat the cauliflower in flour.

In a frying pan on your stovetop, heat enough oil to fry the cauliflower. Using tongs, place the cauliflower bites from the flour Ziploc into the frying pan. Be careful as oil may splatter! Fry until they are crispy on all sides about 5-10 minutes turning as necessary.

Once cauliflower bites are nice and crispy, transfer them to a plate and let cool before eating!

Cook Collards

Chop collard green leaves into small pieces. Heat butter in a skillet on your stovetop and swirl it around until it all melts.

Add chopped collards and vinegar to the butter and stir. Add 1/4 cup water and let the collards steam as the water evaporates.

Sauté on low heat and sprinkle with a pinch of sugar, salt, and a pinch of black pepper. Let collards soften and wilt for a few minutes and enjoy.

Make Iced Tea

Boil 4 cups water in a saucepot on your stovetop. When the water is boiling, add sugar and stir until sugar has dissolved, forming a simple syrup. Once the sugar has dissolved, turn off the heat.

Add the bags of decaf tea to the simple syrup, gently swirling them around as the tea begins to steep into the liquid. Let the tea steep for 5-10 minutes, then remove bags and carefully pour the tea into a pitcher.

Add 2 cups cold water and then serve over ice!
