Southwest chicken salad is a hearty &quot;main dish&quot; kind of salad. It&#039;s simple to make, filled with bold flavors, hearty enough to fill you up, and also makes for delicious meal prep.

Southwest Chicken Salad

chicken breasts (approximately 6 ounces each)

olive oil (divided)

limes

cilantro leaves

garlic (minced)

cumin

chili powder

salt

black pepper

romaine lettuce (chopped)

cherry tomatoes (halved)

black beans

corn (rinsed and drained)

red onion (thinly sliced)

avocado

olive oil

water (or more for thinner consistency)

cilantro, basil or parsley leaves

lime (juiced)

salt and pepper (to taste)

Mix Marinade

In a mixing bowl, whisk together two tablespoons of olive oil, with the lime juice, cilantro, garlic, chili powder, cumin, salt, and pepper. You can also pulse in a food processor until it&#039;s combined.

Marinate

Combine the marinade and chicken fillets in a shallow dish or plastic bag. Marinate the chicken for 2-6 hours in the fridge.

Blend Dressing

When the chicken is done marinating, make the avocado dressing. Place all the dressing ingredients to a food processor and blend until creamy. Set aside.

Cook Chicken

Heat the remaining one tablespoon of olive oil in a large skillet over medium-high heat. Then sear the chicken for 4-5 minutes on each side, until they&#039;re golden brown and have reached an internal temperature of 160 degrees fahrenheit.

Rest

Let the cooked chicken rest for a couple of minutes. Then slice into strips.

Combine Salad

In a large salad bowl, layer the chopped lettuce with beans, corn, tomatoes and chicken strips. Then drizzle the avocado dressing on top.

Southwestern Chopped Chicken Salad

romaine lettuce

chicken*

corn

tomatoes, diced

avocado, diced

red onion, diced

cheddar cheese

tortilla chips

cilantro

plain Greek yogurt (we use nonfat)

Tablespoons extra virgin olive oil

2 teaspoons honey

apple cider vinegar

garlic

Tablespoons lime juice

jalapeño, finely diced

teaspoons taco seasoning (we use mild)

salt,

Add all of the salad ingredients to a large bowl. (If you&#8217;re not serving it right away, add the tortilla chips on last right before serving. They&#8217;ll stay crunchy that way.)

Whisk the dressing ingredients together, except for the salt. Taste, then add salt to your preference.

Spoon dressing over salad, then toss to combine. Serve cold.

I loved this southwestern salad. Very good flavors and texture. I grilled the chicken using a habanero rub, I love spice. I wasn’t too keen with the tortilla chips, next time I will omit. Otherwise an excellent salad!

So good that my spouse wound up eating three bowls worth! I immediately used this recipe the next week to meal prep mason jar salads for lunches at work. Definitely a keeper!

So delicious and easy to make!!! Worked well for make ahead meals for the week. Just kept some ingredients separate!

Loved this salad but my goodness there was a lot of it. To measure the ingredients I used my metal measuring cup. And measured out 6 cups of chicken and lettuce. And a cup and a half of beans and corn. Was that correct? Because we have so much left over. Do you use the metal measuring cups or weigh the ingredients? I will make it again  because we did like it but I will need to cut it back to a third of the recipe. Loved the dressing and fortunately we also have extra so I can use it on other salads.
