Three Bean Chicken Soup gets the party started with great flavor and soothing comfort. It's a healthy soup for cold, winter nights and chilly days at home.

Three Bean Chicken Soup

onion

mini sweet peppers (diced)

butter oil

chicken breasts (diced)

32 oz carton chicken broth

15 oz can black beans

15 oz can chili beans

15 white beans

15 oz can fire roasted tomatoes, diced

15 oz can creamed corn

cumin

turmeric

garlic powder

pepper

cilantro (chopped)

sour cream (cheese, cilantro and tortilla chips to garnish (optional))

In a large dutch oven or stock pot, sauté onion and diced mini peppers in butter or olive oil for a several minutes over medium heat.

Add chicken, then continue to stir until browned.

Pour in chicken broth and bring to a boil.

Add canned beans (undrained), tomatoes and corn. Stir well.

Season with cumin, turmeric, garlic powder and pepper.

Add chopped fresh cilantro and mix all ingredients together.

Simmer soup for 20 minutes on low heat.

Ladle soup into bowls and top with sour cream, cheese and tortilla strips if desired.

This delicious southwest-style soup combines black beans, hearty vegetables, and warm spices. It&#39;s easy to prepare and customize!

Southwest Black Bean Soup (Easy!)

yellow onion

gold potato (about 1 medium)

garlic

vegetable broth

tomatoes

green chiles

sweet corn (I use frozen)

cilantro

chili powder

smoked paprika

oregano

Avocado, cilantro, green onion, tortilla strips, lime juice

Dice onion and potato. Mince garlic.

In a large stockpot over medium-high heat, sauté onion for 7-8 minutes. (I use 3 Tbsp. veggie broth/water for no-oil sauté method, adding more as needed.)

Meanwhile, mince garlic.

When onion is translucent, add potato, garlic, cumin, chili powder, smoked paprika, and oregano. Stir and sauté for 1 minute.

Add broth, black beans (rinsed and drained), tomatoes, green chiles, and corn.

Bring to a light boil. Then reduce heat, cover, and simmer for 20 minutes or until potato is tender.

Meanwhile, roughly chop cilantro and prepare any desired toppings.

Before serving, add cilantro to pot and stir to combine. Salt and pepper to taste. Serve warm with toppings of choice. (I enjoy avocado, lime juice, and hot sauce.)

Spicy chicken soup with fresh tortellini pasta and baby spinach. The zest comes from the green chiles in the petite tomatoes plus the chunky salsa. Tasty and quick to make.&nbsp;

Southwestern Chicken Tortellini Soup with Spinach

chicken

oz baby spinach

oz fresh cheese tortellini

chicken broth or vegetable stock

garlic (minced)

onion (chopped)

olive oil

14 oz. petite cut tomatoes with green chiles

salt (to taste)

black pepper (to taste)

In a large Dutch Oven or pot, heat oil over medium heat. Add garlic and onion and cook until the onion sweats. Lightly salt and pepper. &nbsp;

Add the chicken bites and continue to cook until the chicken bites lightly brown. Lightly salt and pepper. (If using the rotissiere chicken skip this step)

Add the broth, oregano, petite cut tomatoes, and salsa. Bring to a gentle simmer. Now add the shredded rotisserie chicken and again bring to a simmer.&nbsp;

Add the tortellini; bring to a gentle simmer and cook uncovered until the tortellini are tender -- about 7 to 8 minutes. 

Stir in spinach. It will wilt right away. Serve hot. If you like, sprinkle some parmesan cheese on top of this hearty soup. Your cook time is less than 30 minutes.

These yummy looking tortellini sound so satisfying! I never would have thought to combine tortellini with salsa and I can't wait to try!

Hi Marisa,   YEAH!  Soup time just around the corner with fall approaching......even though we love soup year round.  This recipe sounds delish!  Gary loves the heat.  I never thought about using salsa....good Idea!   I’ve always used spicy rotel  tomatoes.  I thought about mom’s many recipes.....I loved them all.  Also, I like the option offered with printable recipes...great idea and saves time when printing your recipes.  Thank you????

I love adding pasta to my chicken soup! Using tortellini just adds that many more options depending on what kind of tortellini you use! Love the recipe suggestions for different styles you provide!

I like the idea of using rotisserie chicken here, shreds so quickly. Tortellini soup is one of my favorite anyways, love it!
