Whip up these speedy, cheesy nachos for a casual get-together with friends

Speedy nachos

packet plain tortilla chips

jar salsa

Tip tortilla chips on to a baking tray, pour over salsa and scatter over a few sliced spring onions.

Grate over a good chunk of cheese (fontina is perfect, but cheddar will do). Add a pinch of crushed chilli flakes, then put under a hot grill for about 3 minutes to melt the cheese. Serve with soured cream or guacamole (optional).

On the table in 25 minutes, the super easy and cheesy one pot is loaded with beef mince, pasta sauce, haloumi and spinach, and will be your new favourite family dinner.

Whip up this yoghurt-based fruity syllabub dessert in only 20 minutes - great for a last minute dinner party

Put the gooseberries and sugar in a pan with a splash of water. Heat gently, stirring, then bring to a simmer and cook until the fruit starts to burst. Squash the gooseberries with a potato masher or fork until pulpy. Cool then chill until cold in the fridge.

Put the yoghurt in a bowl and beat with the icing sugar and vanilla until smooth. Gently whisk in the cream (it will thicken as you whisk so don’t overdo it). Ripple through the gooseberry pulp then spoon into pretty glasses or bowls to serve.

When all you need is a quick and satisfying meal, don’t settle for anything less than gyoza soup. We got all the ingredients for this recipe from Deliveroo.

Emergency Gyoza Soup

itsu Vegetable Fusion Gyozas

Vegetable Stock Cube (500 milliliters)

Tbsp Soy Sauce

Tbsp Balsamic Vinegar

Tsp Crispy Chilli Oil

Spring Onions

Tsp Sesame Seeds

Fill a pot with 500ml of water and bring this to a boil.

Crumble a vegetable stock cube, soy sauce, balsamic vinegar and crispy chilli oil into a bowl.

Boil your frozen itsu gyoza for 2 mins (1 min less than the stated cooking time). 

Crack an egg into a separate bowl and give it a whisk. 

Pour the hot water from the gyoza pan into the bowl that contains your stock and soy mixture. This will form the base of your soup. Whilst stirring your soup on a low heat, drizzle in the egg to form thin wispy strands of egg. 

Scoop out the gyoza and add them to the bowl. 

Top with sliced spring onions and sesame seeds. 

Simple, quick and delicious. A spicy take on a carbonara, you're going to love it.

Creamy 'Nduja Linguine (Without Cream)

Linguine

Parmesan

Nduja

Thyme

Lemon

Bring a large pan of salted water to a boil. Add your linguine and cook until al dente.

Separate 3/4 of your eggs, then add the yolks to a medium-sized bowl. Crack in the remaining egg/s.

Grate your parmesan into the bowl and season generously with pepper, then beat to combine.

Heat a saute pan over a medium heat. Add your ‘nduja and cook for a few mins until it has broken down, the oils are released, and your kitchen smells fragrant and spicy. 

Grate in your garlic cloves. Pick your thyme leaves off their stalks and add these to the pan. Cook for 1 min on a medium heat (careful not to burn your garlic). 

Pour in a ladle of your pasta cooking water. Mix it together until you have a smooth sauce. Get your linguine in the pan. Toss it around in the ‘nduja until it is fully coated.

Take your pan off the heat. Pour your parmesan and egg mixture into the pan and give it a toss, adding more pasta water if you need to make it super glossy.

Zest in your lemon and add the juice from half. Check the seasoning - you might need a little more salt and pepper.

Tong your linguine onto plates, then top with parmesan, lemon zest and pepper. Serve and enjoy.

Add the cherry tomatoes to a pan with a drizzle of olive oil and a pinch of salt. Set it over a medium-high heat and cook for about 5 mins until starting to soften and burst open. Add a splash of water if they’re catching on the bottom of the pan. 

Mince the garlic and add it to the tomatoes in the pan along with the tomato paste, ¾ of the harissa and the smoked paprika.

Add the tinned butterbeans and ½ their liquid to the pan then stir in the vegan cream cheese. Bring the mixture to a boil then turn down the heat and simmer for 5-10 mins until the beans have softened and the broth has thickened (it should be creamy).

Meanwhile, toast the bread and finely chop the herbs.

Ladle the beans into bowls or meal-prep boxes. Drizzle over the tahini and some remaining harissa. Finish with the chopped herbs and flaked almonds. It will keep in the fridge for 3 days.

With all the flavours, I was looking forward to this but it just tasted meh to me. Maybe because it’s not cooked for very long, the flavours just don’t permeate the dish.

Put the potato wedges into a shallow microwave-proof baking dish, then cook on High for 10 mins until almost tender all the way through (turn the wedges halfway through to ensure even cooking). Add the broccoli, re-cover and cook for another 3 mins or until the florets just give with a knife. If you don’t have a microwave, boil instead.

Heat grill to medium. Mix the crème fraîche and mustard together with a little seasoning. Nestle the salmon in among the potatoes and broccoli, then spoon over the crème fraîche mix, making sure most of the broccoli is covered with sauce. Sprinkle with the cheese and grill for 5 mins until the sauce is bubbling, the tips of the potatoes are golden and the salmon is just cooked.
