Spicy Korean Coleslaw

cabbage

g carrots ((2 ounces), julienned)

onion

perilla leaves ((optional), thinly sliced)

fine sea salt

Tbsp gochugaru ((Korean chili flakes))

Tbsp rice vinegar

Tbsp (raw) castor sugar

lemon juice

Tbsp sesame oil

sesame seeds

tsp minced garlic

Thinly slice the cabbage. Place it into a large mixing bowl. Sprinkle some salt and gently mix the cabbage to wilt it lightly.

Add the carrots and the sauce. Mix them well. Garnish with green onion and perilla leaves.

Serve. (It works very well with Korean BBQ.) Best to consume within 24 hours of making it.

Chipotle Mexican Coleslaw

purple cabbage (315 grams)

green cabbage (520 grams)

large carrots, shredded (220 grams/3 cups)

fresno peppers, julienned

apple cider vinegar

lime juice

cilantro,

salt and pepper,

Make the chipotle mayo according to the instructions. Set aside.

Add the shredded cabbage, shredded carrots, sliced jalapenos, and cilantro to a large bowl. Add the chiptole mayo, apple cider vinegar, lime juice, and salt and pepper and mix well to combine. Adjust to taste and enjoy!
