A quick, easy and extremely delicious mango salsa recipe flavored with Indian masalas that a must try this summer season. Pairs great with chips, grilled fish, tacos etc

Quick and easy mango salsa

mangoes

bell peppers (finely chopped)

tbsp fresh coriander (chopped)

tsp chilli flakes

tsp chaat masala

tsp black salt

lime juice

Add all your ingredients in a salad bowl and toss gently, do a taste check to adjust for salt.  Serve your delicious mango salsa along with chips, tacos, grilled fish/chicken etc.

Shredded Pork Tacos with Mango Salsa

black beans

mangoes (very ripe - peeled and diced)

onion

jalapeno

lime zest

orange juice

balsamic vinegar

agave syrup

olive oil

cilantro (chopped)

salt

tortillas

pulled pork

baby spinach leaves

Combine all ingredients in a bowl and stir gently to combine.

Allow flavors to blend for 30 minutes.

Keep refrigerated for up to a week in a tightly covered container.

Mango Salsa

Heat up the tortillas. I usually wrap several in a damp paper towel and microwave for a minute.

Place a few spinach leaves on a warm tortilla.

Top with 1/4 cup of the pork and then a few tablespoons of the salsa.
