If you love summer rolls you are going to go crazy for this summer roll bowl meal prep! Drizzled with a mouthwatering spicy peanut sauce and packed with veggies and fiber to keep you full! This high protein vegan meal prep will keep you full and energized throughout the day!

Summer Roll Bowl Meal Prep (high protein & vegan)

400 g Extra Firm Pressed Tofu (cubed)

tsp Coconut Aminos (or soy sauce)

Edamame (shelled and frozen)

¾ Large Cucumber (cubed)

Carrot (shredded)

Purple Cabbage (shredded)

Natural Peanut Butter

tbsp Soy Sauce

tsp Sriracha

tbsp Lime Juice (or lemon)

tbsp Maple Syrup

Sesame Seeds

Lime Wedges

Start my pressing your extra firm tofu for a minimum of 30 minutes. You can do this with a kitchen towel and heavy object or with a tofu press! Once the tofu is pressed slice into cubes and pan fry with coconut aminos or soy sauce until lightly golden on each side.

Prepare the rest of the veggies by shredding the carrot and cabbage, and slicing the cucumber.

Steam the edamame for a few minutes until cooked then run under cold water. Cook your  noodles of choice then run under cold water.

Prepare the spicy peanut dressing by adding all ingredients to a blender. You can also use a jar and shake the ingredients together.

Assemble your summer roll bowls in 3 separate containers dividing up all the ingredients evenly. Drizzle the sauce over each bowl. I used up the whole spicy peanut sauce for this recipe!

Vegan Buddha Bowl with Spicy Peanut Dressing

coconut oil

g green beans (diced)

quinoa (ready to eat/cooked)

200 g sweetcorn (from can, drained)

red kidney beans (from can, drained)

avocado (sliced)

watercress

cashew nuts

sesame seeds

lime (quartered)

peanut butter

soy sauce

tbsp apple cider vinegar

sesame oil oil

tsp agave syrup (or sugar)

tsp Sriracha or hot chilli sauce

Heat a skillet or saute pan over a medium heat.&nbsp;

Add the coconut oil and green beans, and cook for 30-60 seconds.

Pour in the cooked quinoa, red kidney beans and sweetcorn. Stir well and cook for 3 to 4 minutes or until the beans are just how you like them.

Meanwhile, mix the dressing ingredients together and taste, adding more sriracha if necessary.

Divide the quinoa between two bowls, then top with the avocado, watercress, cashew nuts, sesame seeds and the juice of 1/4 of a lime.

Serve with the spicy peanut dressing, and enjoy!

This Asian salad with spicy peanut dressing will be your new addiction! This sauce brings so much flavor and some heat to compliment all the flavors of the salad.

Asian Salad with Spicy Peanut Dressing

peanut butter (room temperature)

rice wine vinegar

lime (1 1/2 tablespoons)

low sodium tamari or soy sauce

garlic (finely minced or use garlic press)

ginger

honey

sesame oil

avocado oil

Huy Fong Chili Paste

head romaine (washed/dried,

purple cabbage

green cabbage

matchstick carrots

edamame beans (prepared according to package)

cashews (roughly chopped)

cilantro (roughly chopped)

crispy chow mein noodles

In a small bowl, whisk together all of the dressing ingredients, you may also use a blender. Taste and adjust seasoning if needed (see note #1). 

In a large bowl, mix together all the salad components and then drizzle the spicy peanut dressing over the top. Serve alone as is, with grilled chicken, or grilled shrimp.

I took this to a Memorial Day family cookout and it was a hit. The salad is healthy, beautiful, and delicious! The dressing is the bomb! I just tweaked it with a little more honey. I added a cup of chopped red and yellow bell peppers for added color and taste. Add some grilled chicken or shrimp, and you have a meal. Thanks Stephanie!

I made the dressing a month or so ago, and am making the whole salad and dressing tonight. This is quite possibly the best peanut dressing I have ever tasted! It’s delicious!
