Enjoy this spiced rice with beef as part of a family feast. Seasoned with ginger, allspice, cloves and more, it has a lovely warming flavour without being too hot

Spiced rice with beef

ginger,

Blitz the ginger and garlic to a paste in a small food processor. Put the beef in a large bowl and add the ginger-garlic paste, the allspice, cloves, 2 tsp black pepper and 2 tsp salt. Mix to coat the beef, then cover and leave to marinate for 30 mins. Will keep chilled for up to a day.

Heat the oil in a large ovenproof pan over a medium heat and cook the onion for 8 mins until soft and translucent. Tip the beef and any leftover marinade into the pan and sizzle for 10 mins until the beef starts to caramelise in places.

Add the cardamom pods, cinnamon sticks, thyme, all- purpose seasoning and stock. Bring to a simmer, then cover and reduce the heat to low. Cook for 1 hr, then remove the lid and cook for another 30 mins. The beef should be tender but still holding together. Heat the oven to 180C/160C fan/gas 4. Leave to cool completely, then seal in an airtight container and freeze for up to two months.

Tip the rice into the beef mixture with just enough water to cover it by about 1cm. Stir, then dot the butter over the top. Cover and bake in the oven for 30 mins. Fluff the rice up with a fork and serve with Ghanaian gravy (see 'Goes well with').

How to make (better than) Nandos rice

Get the taste of the restaurant with our homemade version of Nando’s spicy rice. This Nando’s copycat version is QUICK, EASY, HEALTHY and so DELICIOUS too. Plus cooks under 30 minutes. The texture is non- sticky, every grain is separated.

Easy Homemade Nando's Spicy Rice

Basmati Rice

Tsp Olive Oil

Water

Veg Stock cube

Medium White onion (diced)

Cloves Garlic (minced)

Red Pepper (diced)

¾ Cup Frozen Green Peas

¾ Tsp Turmeric

½ Tsp ground cumin

½ Tsp Red Chilli Powder

½ Tsp Smoked Paprika

Salt

Wash the rice until clear and soak for 15 minutes in cold water. Drain and set aside. Heat oil in the Pan and add the onion, garlic. Saute, and cook  for  two minutes until fragrant.

Now add diced red pepper, turmeric, chilli powder, smoked paprika, cumin and salt. Saute briefly for 1 minute.

Add the rinsed rice and fry for 3-4 minutes until toasty.

Add 1 1/2 Cup Boiling Water, green peas and stock cube. Stir and allow the rice to boil in medium heat.

When the water has evaporated to the level of rice, place a lid on the pan and reduce the heat to low.

Cook for 6-7 minutes. Once the rice has cooked, turn the heat off. Leave the lid on for a few more minutes.

Fluff the rice with a fork and serve Homemade Nando&#039;s spicy rice with your takeaway favorite.

Possibly the most famous West African dish - Jollof Rice- has made it onto our dinner table! Cooked in a spiced tomato sauce, rice makes a perfect warming side dish to ginger and garlic flavoured sea bass. Bursting with flavours, our Nigerian Inspired Jollof Rice with Fish is an easy weeknight dinner for those who enjoy a bit of &#39;hot and spicy&#39; on their plate!

Nigerian Spiced Jollof Rice with Fish

plum tomatoes (roughly chopped)

tomato puree

pepper

curry powder (jamaican style, ideally)

rice

vegetable stock

coriander

seabass fillets

g ginger (finely chopped or minced)

About 6 hours before cooking, marinate your fish. Combine finely chopped or minced garlic, ginger and oil in a small bowl. Crumble in ¼ of a vegetable stock cube and mix to combine. Rub the marinade on fish fillets, cover with cling film and leave in the fridge for approx. 5-6 hours, or overnight.

For the Jollof Rice, place the tomatoes, tomato purée, chilli, onion, 1/2 pepper, garlic and curry powder in a blender or food processor and whizz until smooth.

In a large pan with a matching lid, heat the oil on medium-high heat. Add the remaining chopped peppers, and the tomato sauce you made in the previous step. Bring to the boil. Add the rice and vegetable stock. Season with salt and pepper. Bring to the boil, then reduce the heat, cover with a lid and simmer for 15 minutes. Take the lid off and stir every couple of minutes to prevent the rice from sticking, until the rice is cooked through. Take off the heat and leave to sit with the lid on for another 10 minutes, whilst you prepare the fish.

Dab the skin side of the seabass with some paper towel (to ensure crispy skin). Lightly brush the base of a non-stick frying pan with oil and heat over medium-high. Place the sea bass fillets in the pan skin-side down. As soon as they hit the pan, press down on the fillets with a spatula or a fish slice to prevent curling.

Fry for 3–4 minutes until skins crisp up. Gently turn the fish fillets over and continue cooking for another minute. The flesh of your seabass should be opaque.

Just before serving, stir in chopped coriander into the rice. Divide the jollof rice between plates, and top with pan-fired bass.  In West Africa, this meal is often served with a side of coleslaw!
