Spicy Vodka Pasta with Chicken

penne pasta

broccoli (chopped)

lb chicken breasts (butterflied)

avocado oil

butter

olive oil

red onion

garlic (minced)

vodka

red pepper flakes

pasta water

basil (chopped)

Prep the chicken breasts by slicing each one in half (butterflied), then flatten them to an even thickness between two pieces of parchment paper using a mallet or heavy pan. Season each side with your favorite seasoning, I used Moulin Rouge Roasted Garlic and Pepper seasoning.

Heat a pan with butter and tablespoon avocado oil over medium heat, and cook the chicken for 4-5 minutes on each side until cooked. Transfer to a plate.

Meanwhile, boil water for the pasta. Add the olive oil to a skillet and sauté onion and garlic for 7 minutes until soft and fragrant.

Add vodka and stir until it evaporates, then add tomato paste and cook for 2-3 minutes until the tomato paste has darkened.

Slowly pour in cream, sprinkle in red pepper flakes, and mix until thickened. Add parmesan, pasta water, and butter, then add cooked pasta.

In the last 2-3 minutes of pasta cooking, add broccoli. Drain and transfer pasta and broccoli to the sauce. Stir to coat, and top with fresh basil before serving.

Slice the cooked chicken and top the pasta. Garnish with parmesan cheese and any extra basil.

Spicy Vodka Pasta (Gigi Hadid Pasta Dupe)

oz (375 g) Ontario pork

(125 mL) finely chopped red onion

garlic,

tsp (2 mL) each hot pepper flakes and salt

(75 mL) vodka

(60 mL) tomato paste

(375 mL) 35% whipping cream

pkg (410 g) rigatoni pasta

tbsp (30 mL) chopped fresh basil

Parmesan cheese

Step 1

In a large non-stick skillet, cook pork, onion, garlic, hot pepper flakes and salt over medium-high heat; breaking up pork with back of spoon for about 5 minutes or until no longer pink.

Step 2

Stir in vodka and bring to a boil. Stir in tomato paste until coated. Add cream and bring to a simmer. Simmer for about 5 minutes or until thickened slightly.

Step 3

Meanwhile, in a pot of boiling salted water, cook pasta for about 9 minutes or until al dente.

Step 4

Remove 1/2 cup (250 mL) of cooking water and then drain pasta well. Return to pasta pot and add sauce.

Step 5

Drizzle in some of the pasta water to moisten, if needed. Stir in basil and serve in shallow bowls. Sprinkle with cheese, if desired.

Rigatoni tossed in a creamy tomato-vodka sauce with Parmesan and hot pepper flakes for just the right amount of heat.

Spicy Rigatoni alla Vodka

shallots (finely chopped (or 1 small onion))

hot pepper flakes

35% cream

tsp kosher salt

450 g pasta ((of your choice))

tbsp butter

Parmesan (divided)

In a large skillet or pot, heat oil over medium heat. Add shallot and cook, stirring until softened, about 3 minutes. Stir in garlic and hot pepper flakes and cook 1 minute.

Add tomato paste and cook, stirring until dark red and beginning to caramelize, 1 minute. Add vodka and cook until most of liquid is evaporated. Stir in cream, salt and bring to a low boil; remove from heat.

Meanwhile, cook pasta in a large pot of boiling salted water, following the package directions. Drain, reserving 1 cup of the cooking liquid. Add pasta and butter to skillet and cook over medium-low heat.

Stir in 1/2 cup of the reserved cooking liquid, stirring constantly, adding more of the liquid as needed until butter has melted and sauce is glossy and thickened, about 1 minute.

Sprinkle in 1/4 cup of the Parmesan, tossing to coat. Divide among bowls and garnish with the remaining Parmesan.
