Vegan Creamed Spinach. Simple Creamy Delicious Spinach baked with non dairy cream and topped with herbed cheesy biscuit topping. Vegan Recipe. Can be Soy-free, Nut-free, Gluten-free.

Vegan Creamed Spinach with Biscuit topping

tsp oil (or broth

oregano

tsp black pepper

tsp red pepper flakes

garlic (, finely chopped)

onion

tsp salt (, divided)

oz spinach

cashew milk

all purpose flour (, see not for gluten-free)

almond flour

tsp baking powder

tsp salt

herbs ((I use rosemary and oregano))

yeast

Heat the cast iron skillet over medium heat. Add oil. Add oregano, black pepper and pepper flakes and mix for a few seconds.

Add onion and garlic and 1/8 tsp salt. Cook until translucent. (3 to 5 mins)

Add the thawed spinach and continue to cook until the water is almost gone. (If using other hardly greens or a mix, cook the hardy greens to wilt and then add spinach)

Add the non dairy cream and salt and mix in. Take off heat. You can add 1 tbsp nutritional yeast or 1/2 tsp miso and mix in, for cheesier creamed spinach. (You can refrigerate this creamy spinach for upto a day)

Make the topping: Mix the flours and dry ingredients in a bowl.

Add 1/2 cup non dairy milk and mix in. Add milk 1 tbsp at a time to make a thick muffin like mixture. Drop spoonfuls over the spinach.

Bake at 400 deg F (205 C) for 25 mins. Broil for a minute to crisp up the biscuits if needed. Serve hot!Store the leftovers in the refrigerator for upto 2 days. Reheat in the oven for 10 mins or so.

Creamy spinach with a hint of nutmeg is baked in the oven topped with melted cheese for guiltless decadent Holiday side dish. Yes, spinach gratin just got a makeover!

Makeover Spinach Gratin

butter

flour (use Gluten free AP flour

tsp fresh grated nutmeg

2% milk

Parmesan cheese

tbsp kosher salt

cheese

Preheat the oven to 425°.

In a heavy-bottomed saute pan melt the butter over medium heat. Add the onions and sauté until translucent, about 10 - 12 minutes.

Add the flour and nutmeg; cook 2 more minutes, stirring occasionally.

Add the milk and cook until thickened, about 5 - 7 minutes.

Squeeze as much liquid as possible from the spinach and add the spinach to the sauce.

Add 1/2 cup of the Parmesan cheese and mix well. Season to taste, with salt and pepper.

Transfer the spinach to a large baking dish and sprinkle the remaining 1/4 cup Parmesan and the Swiss cheese on top.  Bake for 20 minutes until hot and bubbly. Serve hot.

Spinach gratin is a rich and creamy side dish with a layer of crispy melty cheese on top. This fancy side is easy to make ahead and freezer-friendly.

Spinach Gratin

+ 1/2 lb. fresh spinach (3 bunches), stems removed

small onion, diced

tablespoon garlic, minced

all-purpose flour

heavy cream

Parmesan cheese, grated, divided

teaspoon ground black pepper

cup mozzarella cheese, shredded

Cut fresh spinach in half and cook in a large pot of boiling water for 30 seconds until wilted. Rinse the spinach under running cold water until cool to handle. Drain it in a colander and squeeze out excess water. Set aside.

In a large skillet, melt butter over medium-high heat until melted butter turns bubbly, about 1-2 minutes. Sauté onion and garlic until fragrant, about 2 minutes.

Add flour and stir well to combine. Stir in heavy cream and 1/4 cup of Parmesan. Stir constantly and turn the heat down to medium. Bring the mixture to a simmer until smooth and thickened, about 4-5 minutes. Season with salt and pepper to taste.

Stir in spinach and toss well to coat. Cook for 1 -2 minutes until heated through. 

Transfer spinach mixture to a 9-inch square baking pan and top with mozzarella and remaining 1/4 cup Parmesan. Bake for 20 minutes until cheese is melted and golden brown. Alternatively, you can place it under the broiler on high for 2-3 minutes until melted and golden. Keep a close eye on the broiler because things can burn quickly.
