Efo riro (African stewed spinach) is a one-pot vegetable stew with layers of flavor.

Spinach Stew (Efo Riro)

red bell peppers

scotch bonnet

onion

Palm oil

crayfish

locust bean

bouillon cube

Salt

spinach

stock Fish (About 2 handfuls shredded)

prawn (about a handful, Dried)

onion medium size (diced)

lb Beef (A mixture of Beef, Tripe, and cow Skin.)

Blend the bell peppers, scotch bonnet, and onion.

Preheat the palm oil - I like it hot but not bleached. Add the diced onion and stir-fry till golden brown. Add the blended peppers and fry until the sauce thickens up. It takes about 15 minutes, and you need to stir constantly to prevent burning.

Stir in the crayfish, locust bean, bouillon cube, and salt to taste. Stir until everything is well blended.

Add the meat, stockfish, and dried prawns and add some water or stock to thin out the sauce, then cover it up again and allow it to come to a simmer.

Finally, add the spinach and mix well. Then leave it to cook uncovered for about 2 to 5 minutes. Adjust the seasoning if necessary.

11/2 pounds blanched spinach
Blended Peppers - 3 large red bell peppers, 2 scotch bonnet and 1 onion
1/4 Cup Palm Oil
2 Tbsp blended crayfish
2 Tablespoon locust bean
About 2 handfuls of shredded stock Fish
1 handful of dried Prawn
1 medium size Onion- diced
1 seasoning Cube
Meat of choice

How to Make Nigerian Efo Riro - Nigerian Vegetable Soup

Lebanese spinach stew is hearty, warming, and delicious. Using minimal ingredients and can be made in around 30 minutes. Gluten free and vegan.

Spinach Stew (Sabanekh wa Riz)

kg Fresh spinach (chopped small. (Frozen spinach can also be used))

Coriander (cilantro) (finely chopped)

400 g Chickpeas (drained)

Brown Onion (Diced)

garlic

tbsp Olive oil (divided)

Vegetable stock

tsp Black pepper

Fresh lemon juice

Red chili ((optional))

Step 1

In a large pot, over high heat, add 2 tbsp  Olive oil, the diced 1 medium Brown Onion, chopped ½  cup Coriander (cilantro)  and crushed 5-6 cloves Fresh garlic until translucent and fragrant.

Step 2

Add the chopped 2 kg Fresh spinach and 1 cup Vegetable stock. Stir contents through and allow spinach to wilt for about 15 minutes with the lid on.

Step 3

Add 400 g Chickpeas, 1 tsp Black pepper, chopped 1 small Red chiliStir everything together and allow to simmer for about 10 minutes with the lid on. Turn off heat and pour 1 medium Fresh lemon juice. Serve on a bed of rice.

Spinach Stew Sabanekh

Try this authentic Lebanese style Spinach stew made with simple ingredients; it&#039;s wholesome, well-balanced and perfect to feed a large family

Lebanese Spinach Stew

olive oil (divided)

pine nuts

beef

7 Spice

salt (divided)

black pepper (divided)

cilantro

red pepper

10-ounces frozen spinach

chicken broth

lemon

In a heavy bottomed saute pan over medium heat, heat 1 tablespoon olive oil and toast the pine nuts until golden, remove and set aside.

In the same pan over medium high heat, heat the remaining tablespoon of olive oil and add the ground beef, season with 7 Spice, 1 teaspoon salt and 1/4 teaspoon pepper. Cook until the meat is browned, about 5-7 minutes. Remove and set aside, keep any oil and juices in the pan.

In the same pan, add the cilantro, garlic and crushed red pepper, cook for about 2-3 minutes until fragrant. Add the frozen spinach, remaining salt and cook with the cilantro mixture until softened, about 5 minutes.

Add the chicken broth or water and bring mixture to a boil. Return the cooked ground beef and pine nuts to the pan. Lower heat and simmer for 20 minutes until stew thickens.

Stir in the lemon juice and serve over traditional Arabic rice pilaf.
