Sweet Corn Spoonbread

(8.5-ounce) package JIFFY Corn Muffin Mix

can cream style corn

(15-ounce) can whole kernel corn, drained

(1 stick) butter, melted

sour cream

eggs

salt

Preheat the oven to 375° and lightly grease a 2-quart casserole dish with nonstick cooking spray. In a large bowl, combine the ingredients and mix well. Pour the mixture into the casserole dish. Bake 35 to 40 minutes, or until the spoon bread is golden brown and set.

Bacon-wrapped chicken with kumara

Chicken breasts, skinless (Main)

rashers Streaky bacon

Garlic, skin on

Kumara,

thyme

Tbsp Mustard

Cider

Chicken stock

Tbsp Creme fraiche

Wrap 2 pieces of bacon around each chicken breast and season with salt and pepper.

Crush the garlic lightly with a knife. In a small casserole dish, place the kumara, garlic and thyme. Combine the mustard with the cider and chicken stock and pour into the dish. Place the chicken on top of the ingredients, season and bake for 25 minutes or until cooked through.

To serve, dollop the creme fraiche straight into the dish and enjoy.

Original Italian tiramisu

shots coffee (espresso coffee shots)

eggs (5 yolks and 4 egg whites)

mascarpone cheese

160 gr powdered (icing) sugar

1.5 packs Pavesini cookies

Prepare the coffee and let it cool down until ambient temperature. Add the cognac. Then separate yolks from egg whites. You will use 5 yolks and 4 egg whites. Slowly mix the yolks with the powdered sugar.

Add to the cream the mascarpone cheese and gently mix them.

Fast whip the egg whites until they get thick.

Add the whipped egg whites to the cream and gently mix them with a spoon.

Dip each Pavesini cookie into the coffee and create a layer in your kitchen bowl.

Add a layer of cream, then a layer of cookies, and so on until you finish the cream. The top layer must be cream.

Cover and put in the fridge. When you are ready to serve it, add the bitter cocoa powder.

DIY hot smoked salmon

⅔ kgs Salmon, skin on (Main)

brown sugar

Salt

Ltr Water, cold

Woodchips, manuka

Place salmon, skin side up in a plastic container large enough to accommodate the salmon. (Cut the salmon in half if necessary)

To make the brine, whisk sugar, salt and water together in a bowl and pour over the salmon. Cover container with lid or plastic wrap and place in fridge overnight or a minimum of 3 hours.

Place a sheet of aluminium foil in the bottom of a stainless steel smoker (available at most camping or hardware stores) and sprinkle 1½ cups manuka woodchips evenly over the foil.

Remove salmon from brine and place skin side down on a smoking rack in the smoker.

Cover smoker with lid and place over a medium-high gas flame on your barbecue, or place smoker on the ground outside and light a small dish of methylated spirits underneath.

Place a weight on top of the lid to prevent too much smoke escaping if required.

Smoke for 12-15 minutes until salmon is just cooked and able to be flaked.

Remove salmon from the smoker. Remove pin-bones with tweezers. Turn salmon over and remove skin and the blood-line.

Best eaten on the day, otherwise refrigerate in an airtight container for up to 4 days.
