Korean ssamjang combines the savory funk of doenjang with the sweet heat of gochujang for the perfect grilled meat dipping sauce.

Ssamjang (Korean Barbecue Dipping Sauce) Recipe

(60 grams; 60 milliliters) doenjang (Korean fermented soybean paste)

(30 grams; 30 milliliters) gochujang (Korean chili paste)

(15 milliliters) Korean rice syrup (see note)

(15 milliliters) toasted sesame oil

scallions (40 grams), thinly sliced

garlic (10 grams), minced

(4 grams) toasted sesame seeds

In a small bowl, stir together doenjang, gochujang, rice syrup, sesame oil, scallions, garlic, and sesame seeds until well-combined. Serve, or transfer to an airtight container and refrigerate until ready to use.

Put all ingredients in a food processor and blend until the texture is smooth. It will takes about 1 min. Transfer the sauce into a serving bowl. Garnish with the green onion and sesame seeds.

Combine all the ingredients and mix well until everything is well incorporated.

If using optional ingredients, prepare the ingredients, combine and mix everything well.

For basic ssamjang

Preheat a small pan with a tablespoon of oil. Add the onion, scallion and garlic and stir fry until the onion is cooked.

Add the tuna, doenjang, gochujang and the remaining ingredients. Stir well for a few minutes until everything is well incorporated. You can stir in some water or rice wine (or mirin) if the sauce seems dry (2 to 3 tablespoons).

Bulgogi Spring Rolls with Sweet Ssamjang Sauce

600 g bulgogi ((1.3 pounds), marinated Korean BBQ beef)

rice paper sheets ((21 cm / 8.3 inches))

leaves

leaves lettuce (, (buttercup lettuce

English cucumber (seeds removed & julienned)

carrot (julienned)

water (, to soften the rice paper)

bell peppers (julienned (optional))

Tbsp Korean soybean paste ((doenjang))

Korean chilli paste ((gochujang))

tsp sesame oil

On medium-high heat, cook the marinated Bulgogi meat in a skillet.

Place all the prepared ingredients on the table/kitchen bench and get ready for rolling.

Put some warm water in a large bowl and soak a rice paper sheet in it until it softens (5 to 10 secs). Be careful not to tear the rice paper by over softening. Transfer the rice paper onto a board and place the lettuce leaves (2 per roll), perilla leaf (1 per roll), Bulgogi, cucumber and carrot on top. Bring the bottom edge of the rice paper tightly over the filling and roll once. Close in both sides of the rice paper then continue to roll from bottom to top until the top of the rice paper is reached. Repeat with the remaining rice paper sheets and fillings.

(You may slice the rolls into half to present it nicely.) Serve the rolls with the sweet ssamjang sauce.
