Heat 1 tablespoon of oil in a large pan over high heat. Add the steak, season with salt and pepper, and cook until browned, 5-6 minutes. Remove from the pan.

Heat the remaining tablespoon of oil in the same pan, then add the red onion and cook for about 5 minutes, until softened and browned. Add the tomato, garlic, and aji amarillo paste, and cook for another 5-7 minutes, until the tomatoes have released some of their juices, but are still intact.

These Steak Fries are simple to prepare using a few seasonings from the pantry, and are versatile enough to pair well with many different recipes. They have a wonderful heft and bite to them, with crispy edges and a fluffy interior.

Garlic Herb Steak Fries

garlic powder

thyme

oregano

tsp sea salt

tsp black pepper

lbs russet potatoes

olive oil

Preheat the oven to 425 degrees F.

In a small bowl, stir to combine the garlic powder, thyme, oregano, salt, and pepper.

If you plan to eat the potato skins, scrub them with a stiff brush. If you don’t like the skin, peel it off with a vegetable peeler.

Cut the potatoes into wedges. I do 16 pieces, and first cut the potato in half, then keep cutting each piece in half until you cut each potato into 16 pieces.

Toss the potato wedges with the seasonings and the oil, then spread them out in a single layer on a sheet pan. Make sure the potato wedges aren’t on top of each other or crowding one another, or they won’t brown.

Bake for about 20 minutes, until the fries are turning golden brown on the edges.

Flip the potatoes over, then bake for another 5-10 minutes*, until golden brown all over.

Season with extra salt if desired. Enjoy!

Steak Fries Recipe

potatoes

canola oil

Kosher salt

black pepper

Preheat the oven to 425° and have ready one (or two) large rimmed sheet pans lined with either nonstick aluminum foil or parchment paper. Quarter the potatoes lengthwise. Cut each quarter into thirds.

Transfer the potatoes to the sheet pan, drizzle with canola oil and sprinkle with salt and pepper. Toss until evenly coated. Transfer half of the potatoes to a second sheet pan to prevent overcrowding, if necessary. The potatoes will not properly roast/brown if there is no space between them.

Place in the oven and bake 18 minutes. Remove from the oven and carefully turn wedges over, using tongs or a fork if necessary to keep from burning your fingers. If the potatoes stick to the foil, allow them to sit for 1-2 minutes, and then turn.

Return to the oven and bake for an additional 16-18 minutes, or until the potatoes are golden-brown and crisp. Serve and enjoy.

canola oil, for frying

skewer

In a small bowl, mix together the Parmesan cheese, Korean red pepper, sugar, and ramen seasoning.

Cut the potatoes into ribboned curls using the ribbon blade on a spiralizer. If you don’t have a spiralizer, insert a skewer into each potato and, working in a spiral motion, cut in the opposite direction you are turning the skewered potato, making a thin, even spiral all the way down the potato. A spiralizer is recommended.

Gather the potato curls together, then wrap each curl around a wooden skewer, spacing out the potato evenly. Set aside to dry for 5 minutes.

Heat the canola oil in a deep pot until it reaches 350ºF (180ºC).

Fry the potatoes until golden brown, 3-5 minutes, then drain on a paper towel-lined baking sheet.

While the tornado potatoes are still hot, season with salt and sprinkle with the cheese mixture.
