For this recipe you will need a steamer.

Bao buns

265 grams/9½oz plain flour, plus extra for dusting

salt

1½ tsp fast action dried yeast

tbsp caster sugar

tsp baking powder

tbsp vegetable

These vegetarian dumplings can be also made vegan. Full of autumnal mushrooms and squash, they're a tasty addition to a dim sum feast.

Mushroom and butternut squash dumplings

250 grams/9 ounces plain flour,

milliliters/¾fl oz olive oil

125 milliliters/4fl oz warm water

½ butternut squash, peeled

olive oil

butter

150 grams/5½oz wild mushrooms, roughly chopped

1–2 tbsp chopped fresh sage

salt and black pepper

milliliters/2fl oz sesame oil

milliliters/1fl oz soy sauce

milliliters/1fl oz fish sauce (optional

pickled ginger

1–2 tbsp black sesame seeds

1–2 tbsp micro coriander

tsp red chilli flakes

Vegetarian dumplings can balance out a meat-heavy Chinese meal. These are fragrant, savoury and delicious.

Peking-style vegetable dumplings

vegetable oil

grams/1¾oz morning glory, finely sliced (available in some Asian markets; substitute spinach if unavailable)

grams/1¾oz pak choi, finely sliced

grams/1¾oz fresh shiitake mushrooms, finely sliced

red onion,

bamboo shoots, finely sliced

grams/1¾oz beansprouts

coriander,

red chilli, seeds removed, finely chopped

circular wonton wrappers (for vegan versions, look for egg-free wrappers)

cornflour,

vegetable oil, to shallow fry
