Hold the base of the artichoke and use kitchen shears to trim the ends of the leaves to remove the sharp thorns. The top two rows of leaves do not need to be trimmed.

Hold the artichoke firmly at the base and use a large chef’s knife to cut the top two rows of the leaf tips.

Cut the stem off flush with the base of the artichoke bulb.

Add to a medium bowl with 1 quart of water and 2 tablespoons lemon juice.

Submerge and let it sit in the acidulated water until ready to cook. This helps to prevent the leaves and stem from browning.

Preparing Artichoke (For both methods)

Remove artichoke from lemon water.

Bring water and salt to a boil. There should be enough water to cover the artichoke.

Add artichoke to the water, reduce to a simmer, cover and cook until the leaves can be easily pulled off, about 20 to 35 minutes depending on the size.

Drain and cool before eating.

Boiled Artichoke

Remove artichoke from lemon water, shaking off the excess moisture. 

Fill the bottom of a large pot with about 2-inches of water, so that it&#039;s below the steamer basket when inserted.

Add in the steamer basket and then the artichokes. Cover the pot and turn the heat up to medium-high.

Once the steam is built up in the pot, start the cooking time.

Cook until the leaves can be easily pulled away from the bulb, about 20 to 35 minutes, depending on the size.

Steamed Artichoke

Microwave steamed artichokes are a hands off and easy way to prepare California's official vegetable.

Trim off stem and 1 inch off the top of each artichoke. Also trim the sharp points off each of the leaves.

Wrap loosely in plastic wrap and place artichokes in the microwave.

Cook on High for 15 &#8211; 18 minutes. The artichokes will be ready when a knife easily pierces the stem.

Unwrap carefully as the artichokes are very hot and will release steam.

Serve with melted butter and lemon wedges.

Prepare the artichoke stem: Pull any leaves off the stem, and use a vegetable peeler to peel off the stem&#x27;s woody exterior. Use a sharp stainless steel knife to trim off the end of the stem and gently score the trimmed end with an &quot;X&quot; pattern. Rub the stem all over with the cut side of one of the lemon segments to prevent browning.

Prepare the artichoke bud: Cut off the top quarter off the artichoke, about 1/2-1 inch. Rub the cut leaves all over with the lemon. Use kitchen shears to snip off the pointy tips of the remaining leaves.

Steam the artichoke: Fill a large pot with 1 inch of water, and squeeze in any remaining lemon juice. Add the squeezed lemon segments to the pot. Place a steamer basket in the pot, add the artichoke, and bring to a boil. Cover and steam for 35-45 minutes, or until the artichoke stem is fork-tender and you can easily peel off the outer leaves.

Remove the choke: Allow the artichoke to cool slightly. Slice it in half lengthwise, and use a small spoon to scoop out the hairy choke.

Serve the artichoke halves with melted butter or another dipping sauce of your choice. To eat, dip the leaves into the sauce and use your teeth to scrape off the meat, discarding the tough, fibrous shell. You can eat the artichoke heart and stem in their entirety.
