Recipe video above. You're my favourite pudding - and always will be.... My favourite part is poking holes in the pudding and pouring over the hot butterscotch sauce so it soaks in, making it so ultra moist... And then of course serving it with even more sauce!&nbsp;

Sticky Date Pudding

tsp baking soda / bi carb soda

/ 250 ml boiling water

brown sugar (, loosely packed)

80 g / 6 tbsp unsalted butter (, softened)

eggs (, at room temperature)

/ 185 g plain flour ((all purpose))

tsp baking powder

375 ml ml / 1 1/2 cups thickened cream ((heavy cream))

tsp vanilla extract

unsalted butter

Ice cream or dolloping cream

Preheat oven to 180C/350F (standard) or 160C/320F (fan/convection).

Grease 7 pudding moulds (Note 2) with butter or grease and line a 20 cm / 8" square cake pan with overhang.

Place dates in a bowl, sprinkle over baking soda. Pour over boiling water. Stand 10 minutes, then mash well with a potato masher (or fork) until it resembles sloppy porridge (see video for texture / thickness). (Note 3)

Mashed Dates:

Place butter and sugar in a bowl. Beat until combined and smooth.

Add eggs, beat until incorporated.

Add flour then sprinkle baking powder across the surface. Mix until flour is incorporated.

Add dates, mix quickly until dates are well incorporated into the batter. (Note 2) Follow directions to make one pudding or individual ones.

Batter:

Pour into cake pan, smooth surface. Bake 35 minutes or until skewer inserted into the centre comes out clean.

While still hot, poke about 40 holes all over the surface using a skewer. Pour over 1/2 cup Butterscotch Sauce, leave to soak for 10 minutes.

Use overhang to lift cake out. Cut, serve warm with remaining warm sauce and ice cream or cream.

One Pudding:

Pour batter into pudding moulds, only fill 2/3 of the way up.

Bake for 25 minutes, or until skewer inserted into the centre comes out clean.

While still hot, poke about 10 holes on the surface of the pudding. Spoon over 1 tbsp of Butterscotch Sauce per Pudding. Leave to soak 10 minutes.

Turn pudding moulds upside down on serving plate. Serve warm with remaining warm sauce and ice cream or cream.

Baking Individual Puddings:

Place ingredients in a saucepan over medium heat. Once butter is melted, stir, then bring to simmer.

Simmer for 2 minutes, stirring once, then remove from heat. Serve warm.

Easy Sticky Toffee Pudding is a deliciously gooey sponge cake drenched in warm toffee sauce that&#039;s a favorite among the English.

Sticky Toffee Pudding

medjool dates (, dried, pitted)

water

butter (, room temperature)

brown sugar

vanilla extract

eggs (, room temperature)

Tablespoons molasses

all-purpose flour

baking powder

baking soda

salt

heavy whipping cream

butter

walnuts (, optional)

Preheat the oven to 350 degrees F. Lightly grease a 12-cup muffin tin, ramekins, or an 8’’ baking dish.

Add the dates to the bowl of a food process or blender and pour boiling water on top. Set aside for 5 minutes.

Meanwhile, prepare the batter: Cream together butter and brown sugar. Add eggs, one at a time, beating after each addition. Add the molasses and mix.

Sift together the flour, baking powder and salt, and then stir into the batter.

Pulse the date mixture in a food processor, then stir in baking soda. Pour date mixture into batter (no need to strain) and fold in gently to combine (don’t over-mix).

Pour batter into prepared pan. Bake for about 18 – 20 minutes or until toothpick inserted in the center comes out clean or with few crumbs. Don’t overbake or cake will be dry. (For square baking pan, bake for 22-25 minutes).

Serve muffin cakes flat-side up, with warm toffee sauce on top.

Add cream, butter, brown sugar and salt to a saucepan. Cook over low heat, stirring, until sugar dissolves and sauce is smooth, and slightly thickened about 7-10 minutes. Remove from heat and stir in vanilla.

Spoon toffee sauce over cake and garnish with chopped walnuts, if desired.

Store the cakes and sauce (in an airtight container) separately for up to five days in the refrigerator.

Gluten-Free Sticky Date Puddings

tsp bicarb/baking soda (See Note 2)

tsp ground ginger (See Note 3)

tsp cinnamon

250 ml (1 cup) filtered water

60 g (1/4 cup) unsalted butter (See Note 4)

155 g (3/4 cup) light brown sugar

eggs

tsp vanilla extract (See Note 5)

200 g (1 cup) light brown sugar

g (1/2 cup) unsalted butter

tsp sea salt flakes (optional)

Prepare a 12-hole (1/3 cup) muffin tin by lining it with cupcake/muffin paper liners.

Preheat your oven to 180 degrees C (355 F).

Add the chopped dates, bicarb/baking soda, ground ginger and cinnamon to a small saucepan, add water, bring to a boil. Lower the heat and simmer for 5 minutes. Put the mixture in a bowl and set it aside to cool for about 20 minutes.

Add the butter and brown sugar to the bowl of a food processor and whiz to combine well. Add the date mixture and remaining pudding ingredients to the bowl of the processor and whiz until they are just combined. Whilst combining the ingredients, scrape down the side of the bowl as necessary.

Using an ice cream scoop or large spoon, evenly distribute the pudding mixture between the 12 muffin cups. Fill them about 2/3 full – See Note 9.

Place into the preheated oven and bake 15-17 minutes or until a toothpick or skewer inserted into the centre comes out clean.

Remove the tray from the oven and set it aside for the puddings to cool for about 5 minutes, then carefully remove the puddings.

Remove their wrappers and place the puddings upside down on a serving plate. Pour over some sauce and serve with cream or vanilla ice cream. Serve any remaining sauce separately.

For the Puddings:

Add the brown sugar, cream, vanilla extract and butter to a small saucepan. Over medium heat, stir with a wooden spoon until the sugar dissolves.

Bring to a boil, then reduce the heat to low and simmer for 2 minutes. Be careful when stirring the hot sauce. Add salt flakes if using, or sprinkle some on as you are serving.

The Toffee Sauce will thicken as it cools. If making in advance, reheat for serving.

Making sticky date pudding has never been easier. This tray-baked version is the real deal. Whip it up for your next dessert and serve with a dollop of cream.

0.5 tsp bicarbonate of soda

free range eggs

self-raising flour (to dust)

double thick cream (to serve)

Preheat oven to 180°C/160°C fan-forced. Lightly grease a 20 x 27cm (5cm deep) baking tray.

Place dates and butter in a small bowl. Add bicarbonate of soda and 1/2 cup boiling water. Set aside for 10 minutes. Stir.

Place eggs and brown sugar in a large bowl and whisk until combined. Stir in date mixture, then fold in flour. Pour batter into tray.

To make the caramel sauce, place brown sugar, butter and 1 1/2 cups boiling water in a large jug. Stir until butter has melted. Stand for 10 minutes to cool slightly. Slowly pour mixture over back of a large metal spoon to cover batter. Bake for 35 minutes or until pudding bounces back when gently touched. Dust with icing sugar and dollop with cream. Serve immediately. 

This salted caramel sticky toffee pudding is deliciously rich and comforting with a no-fail salted caramel sauce and the perfect Christmas dessert.

Salted Caramel Sticky Toffee Pudding

200 g dates (pitted, (1+½ cup roughly))

water ((1 + ¼ cup))

flour

dark brown sugar ((¾ cup))

tsp baking soda

270 g cream 35%

100 g dark brown sugar

corn syrup (or honey)

sea salt

maldon sea salt (for garnish)

Soak the Dates

Place the dates and the water in a saucepan and bring to a boil. Boil for 5 minutes, then add the tsp of baking soda.

Blitz

Blitz the dates and the water together in a food processor until smooth. The date purée should weigh 365g when finished.

Measure

Set the oven to 350°F/ 170°C. Measure out the rest of the ingredients before you begin.

Get the pan ready.

Sprinkle a splash of water onto the baking pan and add the parchment paper. The water helps the parchment paper to stick to the pan.

Cream the butter

Cream the butter and sugar together over medium speed with the paddle attachment of the mixer for about 5 minutes or until fluffy.

Add the eggs

Add the eggs one at a time and mix until just combined. Add the date purée and mix until smooth.

Fold in the flour

Sift the flour into the mixture and fold in. Use a whisk to break up any lumps from the flour.

Bake

Add to the lined baking pan and bake for 35 minutes at 350°F/ 170°C.It&#039;s done when a toothpick inserted in the center comes out clean.

Poke holes

Once it&#039;s baked let it cool for at least 20 minutes. Poke holes in so the caramel can seep inside the cake.

Make the sauce.

Prepare the sauce by adding all the ingredients together in a small sauce pot and bringing it up to a boil over medium heat. Stir briefly to prevent the sugar from burning and once it boils stop stirring and turn down the heat to low. Cook for 5 minutes. Once finished let it cool in the pan.

Sauce the cake.

Pour half of the sauce over the cake and let cool.

Cut into square.

Once the cake has cooled, cut into 9 squares. The sticky toffee pudding is perfect served room temperature with hot sauce over top. Garnish with a little sprinkling of crunchy malton salt.

Sticky date pudding doesn't have to be a naughty dessert. With a few clever substitutions, you can have a delicious treat, without the added calories.
