Good concept bad execution. Pan sear your chicken 5 min per side in olive oil. Bacon grease doesn't matter. Transfer to glass 9x13 (skin side up) and bake for 15-20 minutes basting with butter and juices every 5 min. Dont cook your crispy chicken in the sauce! It makes your crispy skin a flappy nasty pile of whatever and restricts your ability to deal with the all important sauce in the pan... Pre-chop your bacon and sautee til not quite crisp. Add onion. Cook 4-5 min. Add mushrooms. Cook 2-3 min. Add garlic. Cook 1 min. Dont add all sauce ingredients at once!!!!! This results in potential clumping etc. Just dont. Deglaze the pan with white whine (1/4 cup). Cook an additional minute. I skip the broth, double the cream. Add the cream and let it come up to heat slowly so you dont burn it. Low to low-medium heat. When it is lightly bubbling, add cheese in slowly stirring constantly and seasoning to taste. I generally add a bit of chopped spinach to a sauce like this for variety. Take of heat and throw in 2 Tbsp unsalted butter. Let it melt in off heat to provide a little extra richness. Extra keto friendly.

I made this tonite for supper. I cooked the chicken longer(20 min per side) before adding the liquid. I didn’t add the lemon juice. My husband LOVED IT !He’s still talking about it 3 hours later. Definitely will be making again ! Thanks for the recipe. It is a keeper. 👍

I don’t actually follow a Keto diet, but this recipe caught my eye because I love bacon, garlic, and chicken thighs! Try making the recipe as written, the flavor profile is delightful! And it’s a fairly easy recipe, so even if you are a beginner or novice cook, this will surely knock the socks off of your dinner guests, and will impress! I’ve made it quite a few times now, sometimes subbing French shallots for the red onion, sometimes using leg quarters. I do like to serve on a bed of spinach or kale. Occasionally over a risotto. Presentation is amazing if you get a good sear on your chicken skins! And since I’m not Keto, I often add a chunk of crusty bread to soak up that delicious sauce! So good! Thanks for sharing this elegant, but simple recipe!!!

Made this for my fire station (there are 12 of us so I did it in two large cast iron skillets) and it was a hit. For the non-keto guys I served egg noodles to go under.

I thought it was great!  I added a little Worcester sauce and omitted the bacon. I’d probably seat the chicken a bit more. Served over riced cauliflower and it was delectable!

I followed this, just doubling.  Added the garlic that is not in the recipe.  It was ok.  Certainly not worth the added effort over putting chicken in the slow cooker or in the oven and baking.  I was very disappointed.  Yes we ate it, but will not make it again.

You are not going to believe how crispy these chicken thighs are! I like to flavor them with fresh rosemary and garlic, but see the notes for more variations.

Crispy Chicken Thighs with Rosemary and Garlic

chicken thighs*

tsp extra virgin olive oil

garlic

Season chicken and prepare pan

Pat chicken dry and season with salt and pepper. Add oil to room temperature, nonstick pan. The pan should be small enough for the thighs to be slightly crowded in pan. Add chicken skin side down and turn heat to medium. Add garlic and rosemary to pan.

Slowly cook chicken: 

Allow chicken to slowly cook on skin side for a total of 40-60 minutes. Once pan heats up, reduce heat to medium-low so skin renders fat, and slowly browns and crisps. Move garlic and rosemary in pan as needed to prevent burning.

Flip and Deglaze: 

Once chicken appears about 90% of the way cooked through and the skin is crispy, flip over chicken. Pour white wine in the bottom of the pan, avoiding the skin. Increase heat and allow most of the wine to evaporate and for chicken to finish cooking through, 4-6 minutes. 

Serve: 

Serve chicken with pan juices, and garlic cloves. The garlic should be tender and sweet. Enjoy.

A full hour skin down. I am going to try this ASAP. I bet the skin is crazy crispy. You are breaking new ground here. Nice! 

And yes, pulling rendered chicken fat out of the pan to cook something else that will land on the plate something everybody needs to start doing.

Prepare the chicken thighs, remove any visible unwanted fats and hanging skin. If you are using boneless skinless chicken thighs, then you may not need to do much.

Season both sides of chicken with the spices generously.

Place a large iron skillet over medium high heat, then add oil until hot. Add the chicken thighs skin side down and pan sear for 3 minutes untouched until skin is nice, golden, crispy and no longer sticking to the pan. Flip chicken to the other side and pan fry for another 3 minutes.

Add chicken broth to the chicken, move around in other to deglaze the skillet. This would make some delicious pan sauce. After adding the chicken broth, cover the skillet with a lid (this is optional) and continue to cook chicken over medium heat for 10 minutes or until chicken is completely cooked. Measure out the ingredients. Mix together the parsley, paprika, onion granules, garlic powder, thyme, and salt.

Use a kitchen towel to pat the chicken dry.Season the chicken with the seasoning mix ensuring that all parts are coated in the seasoning. 

Place a wide skillet or frying pan on the stove on medium heat. Add oil into the skillet and add the chicken thighs skin side down (smooth).Cook for 5 minutes then flip them over and cook for another 5 minutes.

Add in the chicken broth, deglaze the skillet and let the thighs cook for 10 minutes or till they are cooked through.If using boneless chicken, make it 5 minutes instead of 10 minutes or until it&#039;s cooked through.The internal temperature should be at least 165F/75C to be safe for consumption.

When it&#039;s cooked, leave to rest for 5 minutes then serve.You can thicken the pan sauce with cornflour slurry or serve as it is.

Bone-in Chicken Thigh Recipe (Stovetop)

lb bone-in, skinless chicken thighs (See Note 1)

½ tbsp distilled white vinegar

Optional (but optimal) marination: Place the chicken in a medium bowl and toss with everything but the ketchup. Cover the bowl and let it marinate at room temperature for up to 2 hours; or in the refrigerator up to 24 hours. If skipping the marinade, start with the next step.

Heat a large, wide pan or Dutch oven with lid over medium heat. Add the marinated chicken and its juices (if you didn’t marinate, add all of the ingredients except the ketchup to the pan). Mix well to combine, then spread out the chicken pieces into a single layer.

Reduce the heat to low or low-medium to maintain a gentle simmer.

Cover the pan and cook, tossing halfway through, until the chicken is fully cooked, about 25 minutes.

Increase the heat to high. Bring the remaining liquid in the pan to a boil and cook until most of it has evaporated (~5-6 minutes). Stir in the ketchup. Sauté, stirring only as necessary to allow the chicken to lightly sear (~2 min). Once the moisture has completely evaporated, turn off the heat. Serve immediately.

Tonight, I'm making this delicious and simple recipe for about the fifth time.  It is SO easy to make ... and ... beyond scrumptious!  'This' time, I marinated the chicken in the fridge for 7.5 hours, as opposed to only an hour, previously.  So I suspect that it will be even MORE delicious ... although that seems impossible, because how do improve upon perfection?!   YUM!!!  Can't wait.
