These No-Bake Strawberry Cheesecake Parfaits are delicious layers of graham crackers, cheesecake and fruit that are so easy to make!

Strawberry Cheesecake Parfaits (No-Bake)

graham cracker crumbs

salted butter

heavy cream

cream cheese

Tablespoons plain or vanilla greek yogurt

sugar

vanilla extract

Store-bought strawberry fruit spread/jelly/jam (can use any other fruit of your choice)

In a bowl, combine the graham cracker crumbs and the melted butter. Mix well.

Add about 2 Tablespoon of this mixture to each of the glasses that you are using and set the glasses aside.

Using an electric mixer, whip up the heavy cream till you get stiff peaks.

In another bowl, take the cream cheese and add yogurt, vanilla extract, sugar, and beat it till it becomes smooth and creamy. Make sure there are no lumps.

Gently fold the whipped cream with the cream cheese and set it aside.

Fill this mixture in a piping bag, cut out a large opening and then fill your glasses almost till the top, leaving a little space for the topping. Note: you can just spoon the cheesecake mixture into the individual parfaits if you don’t have a piping bag.

Put it in the refrigerator  for at least an hour to set before you put the topping.

Top it up with the strawberry jelly, garnish with fresh strawberries and mint leaves if desired  and serve chilled.

No Bake Strawberry Cheesecake Parfaits

blocks cream cheese (softened)

can sweetened condensed milk

vanilla paste

Remove and discard the stems from the strawberries, then cut the strawberries into bite-sized pieces. Place in a bowl with the sugar, lemon zest, and lemon juice. Stir well to combine, then let this sit for 15 minutes.

In the meantime, place the graham crackers into a food processor, and pulse until ground into fine crumbs. If you don’t have a food processor, you can crush the graham crackers with a rolling pin instead.

Combine the graham cracker crumbs and melted butter in a bowl, and stir until the crumbs are moistened. Set aside.

In a large bowl, whip together the cream cheese, sweetened condensed milk, and vanilla paste with a hand mixer, for about a minute on medium high speed, until the mixture is smooth and combined.

To assemble the cheesecake parfaits, place a few spoonfuls of the cheesecake mixture into the bottom of a glass. Next add a layer of the buttery graham cracker crumbs. Top that with a layer of the macerated strawberries (leave the excess liquid behind and discard), then repeat with one more of each layer. Chill the parfaits for about an hour in the refrigerator before serving, and enjoy!

This recipe was absolutely delicious. All the ingredients went perfect together . My favorite part was the taste of lemon with strawberries . 100/10
DEFINITELY going to be my go to for desserts to make for party’s 

I liked the concept when I read the recipe, and decided to use a combination of strawberries and mangoes.  Luckily I had extra of both, because for me the proportions were way off, and I ended up pausing while assembling it to cut up and add more fruit (so some of it didn't get to sit with the lemon and sugar).  I probably used triple the amount of fruit vs. what was in the recipe.  With that alteration, we enjoyed this.  Thanks!

I made these for my daughters baby shower.  They were a HUGE hit with everyone. They were so easy to make and didn't have to heat the oven.  They taste as good as a bakery would make.  I will make them again soon.

I loved this recipe! For my taste it was turning out a bit sweet so I used 2/3 of the can of condensed milk - but definitely can see how the full can would be very yummy!  This is also a really good with fruit salad if you have some that needs to get used up!

can you substitute other fruits?
