It has great flavor with sweetness of berries, saltiness of feta, crunch from almond (used slivers) and spinach. However, it seems dry so added olive oil helped a little. After oil and balsamic absorbed, pasta still seems dry.

Strawberry Avocado Chicken Pasta Salad

baby spinach

arugula

chicken (rotisserie chicken works well)

bowtie pasta

strawberries

avocados (sliced)

blue, feta, or goat cheese

pecans (or walnuts)

balsamic vinegar

olive oil

garlic

Italian seasoning blend

salt and pepper

honey

plain fat free Greek yogurt

dijon mustard (optional)

Combine all dressing ingredients in a jar, cover, and shake well until all ingredients are incorporated and creamy.

In a large bowl&nbsp;combine spinach, arugula, shredded chicken, avocado, pasta, strawberries, crumbled cheese, and chopped nuts. Pour dressing over salad and toss to combine. Serve immediately.&nbsp;

To prepare in advance, reserve dressing until ready to serve, then pour over salad and toss immediately before serving.&nbsp;

Strawberry Avocado Pasta Salad

(450 grams) pasta (any shape you prefer)

(150 grams) baby spinach

(453 grams) strawberries (hulled and sliced)

avocados (peeled, destoned and diced)

green onions

Balsamic vinaigrette (to taste)

poppy seeds

mint leaves (for optional garnish)

salt and pepper (to taste)

Cook the pasta according to package instructions, drain when done, and rinse with cold water so it stops cooking.

Add the cooled down pasta to a bowl along with the spinach, strawberries, avocado, green onions, poppy seeds and balsamic vinaigrette, Mix, taste, and adjust amount of dressing, as needed.

Allow salad to chill in the refrigerator for at least 1 hour, then garnish with mint leaves and  serve.
