Cups Crushed Sugar Cookies (Homemade or Store Bought, Divided)

Cup White Sugar

Tablespoons Melted Butter

Ounces Cream Cheese (Softened)

Cup Heavy Cream

Pound Strawberries

Preheat oven to 325 degrees F. Grease a 9x13 pan with non stick cooking spray.

In a small bowl mix 1/12 cups of crushed sugar cookies and butter until blended. Press into prepared pan.

Bake for 30-35 minutes or until golden brown. Cool completely.

While the crust is cooling, wash, hull, and slice strawberries.

Combine heavy cream and sugar. Whip until stiff peaks form. Fold in cream cheese and strawberries.

Spread on top of cooled crust. Top with remaining sugar cookies.

Store in the freezer for a cool summer treat.

Strawberry Shortcake Bars Recipe

butter (softened)

tsp baking powder

tsp salt

all purpose flour

milk

tsp pure vanilla extract

oz cream cheese (softened)

oz cool whip (frozen)

Preheat oven to 350°F and remove cool whip from freezer to thaw.

In a large bowl, beat together sugar and butter until creamy. Mix in eggs, baking powder and salt. Alternate between adding in the flour and milk, beating after each addition. Beat until all ingredients are combined. Stir in vanilla extract.

Pour batter evenly into a greased and floured a 9 x 13 inch baking dish.

Bake for 18-20 minutes until a toothpick comes out clean. Be sure not to over bake. Cake should be flat and light in color. Let cool completely. Set aside.

Slice up strawberries and set aside.

In a large bowl, cream together cream cheese, powdered sugar and frozen whipped topping. Evenly spread cream cheese mixture over top of cooled cake. Top with sliced strawberries.

Refrigerate for 3 hours.

This cake is so good and refreshing. It’s my go to dessert for gatherings.

This was such a simple and easy recipe to make and it was light and delicious. Everyone loved it and asked for the recipe. Will definitely make this again for family gatherings and for my family.

Delicious, everyone raved about it. The only issue I had was it took my cake at least 45 minutes to bake, maybe longer. My oven seems to be fine cooking everything else so I don’t think that was the problem. No matter, it was really good and I will make it again! Thanks for a great recipe.
