Made with sour cream, butter, and cheese and stuffed into a crispy potato skin, this Twice-Baked Potato is an easy recipe that always delivers on flavor.

Twice-Baked Potatoes

russet potatoes

olive oil

salt

milk

butter

sour cream

shredded cheese (divided)

pepper

garlic powder (optional)

onion powder (optional)

Clean

Preheat the oven to 400 degrees F. Scrub the potatoes well, dray, and pierce each potato several times with a fork.

Bake

Place each potato on a sheet of aluminum foil. Drizzle each potato with olive oil and sprinkle with 1/2 teaspoon salt. Roll the potatoes to coat the skin with the salt and oil and then wrap them in the foil. Place the wrapped potatoes onto a baking sheet and bake at 400 degrees F, until potatoes are fork-tender for 40-45 minutes.

Scoop out Flesh

Once potatoes have been baked, allow them to cool for 5-10 minutes. Slice the potatoes in half and then using a spoon, melon baller, or cookie scoop, scoop out the flesh of the potato into a large mixing bowl, leaving behind a 1/4 to 1/2-inch border around the potato skins.

Heat

Place the butter and milk into a heat-safe container and microwave in 30-second intervals until the butter is melted and the milk is lukewarm.

Mix Filling

Mash the potato flesh well with a fork. Add the warm butter, milk, and salt to the potatoes and mix well to incorporate. Stir in sour cream and 1/4 cup of the shredded cheese into the potato filling.

Stuff Potatoes

Place half the potato skins onto a baking sheet and season with salt and pepper. Generously fill the stuffing into the potato skins and top with the remaining cheddar cheese.

Return the potatoes back to the oven and bake for 15 minutes, until the cheese is melted and the filling is warmed through. Serve immediately.

This is pretty much every cheese lovin,’ carb monster&#039;s dream come true. Dainty food this ain&#039;t – this is proper comfort food, turned up to 11!Serve it as a side, or as a meal.

Twice Baked Potatoes (Stuffed Jacket Potatoes)

tbsp canola or vegetable oil

tsp salt

bacon

/ 8 tbsp unsalted butter

cream ((pure

cheddar cheese (, shredded (Note 3))

green onions (, finely sliced)

tsp pepper

tbsp chives (, finely chopped (garnish))

Sour cream ((recommended!))

Preheat oven to 220°C / 430°F (200°C fan). Place a rack on a tray (recommended but not critical).

Prick potatoes: Wash, scrub and dry potatoes well. Prick each potato 8 times with a fork.

Oil and salt: Put potatoes in a bowl, pour over oil and rub onto potatoes. Then sprinkle over salt and use your hands to coat. (Just do this as best you can. Some will stick, much will not!)

Bake: Place potatoes on rack and bake for 75 minutes or until you can pierce with a small knife with no resistance.

Bake potatoes:

Cook bacon: Place bacon in a cold non-stick pan over medium heat. When the fat starts to melt, turn the heat up to high and cook bacon until golden. Drain on paper towels.

Heat butter and cream: Melt butter in a saucepan over medium heat. Then add cream and heat until hot, but don&#039;t let it boil. (You could also do this in a microwave)

Prepare filling add-ins:

Lower oven: Turn oven down to 200°C / 390°F (180°C fan).

Scoop out potato flesh: Allow potatoes to cool enough so you can handle them (or use a tea towel). Cut in half lengthwise and scoop out potato flesh, leaving 0.7cm (1/3&quot;) thick layer of potato still stuck to skin.

Mash potato: Place potato flesh in a bowl and mash while hot until smooth.

Add-ins: Add half the cheese (save the rest for topping), most of the bacon (save a bit for garnish), all the green onion, hot cream and butter, salt and pepper. Stir to combine.

Stuff potatoes:

Stuff and top with cheese: Fill potato skins with the mashed potato mixture. Top with remaining cheese.

Bake: Bake for 20 to 25 minutes until the cheese is melted, golden and bubbly.

Serve: Serve immediately, garnish with sour cream, reserved bacon and chives.

Bake again!

So good! Cut it in half to make two potatoes worth and added some smoked paprika.. definitely recommend adding that!

Preheat the grill or oven.

Preheat the grill or oven. Preheat your pellet grill, smoker, or oven to 375 degrees F. These potatoes can be cooked in just about anything you have available.

Prep the potatoes.

Prep the potatoes. Wash and scrub your potatoes well. Coat all sides of the potatoes with olive oil, and season with kosher salt

Bake the potatoes.

Bake the potatoes. Place the seasoned potatoes directly on the grill grates. Close the lid and cook for 45 minutes or until the potatoes are easily pierced with a fork.

Reheat the brisket.

Reheat the brisket. During the last 15 minutes of cooking the potatoes, place the brisket in a cast iron skillet and into the grill/oven. The brisket should be heated and tender when your potatoes are done.

Stuff!

Stuff! Cut a slice lengthwise into each of the potatoes and press on the ends to open them. Fill each with a portion of the shredded cheese, BBQ sauce, brisket, sliced green onions, and sour cream. Serve immediately.

This recipe is less of a recipe, and more of a compilation of different elements, but it is ridiculously delicious and I couldn’t not share! This pulled pork stuffed baked potato is the bomb freaking dot com (that just happened) and you need it in your mouth right now (unless you don’t have leftover brisket or pulled pork handy, then you need to get a pork butt, smoke it, and then make it.)

These stuffed baked potatoes start off with seasoned potatoes roasted in the pellet grill until buttery soft. Then we load them up with shredded Colby jack cheese, Everything BBQ sauce, juicy brisket or pulled pork, and freshly sliced green onions. The Todd even threw some sour cream on his and it was full on out of body experience kind of delicious!
