PORTOBELLO MUSHROOMS STUFFED WITH BREADCRUMBS

medium/large portobello mushrooms

olive oil

onion (finely chopped)

garlic

breadcrumbs (see note)

parsley

dill

salt and pepper

Remove the stems from the mushrooms and finely chop. Set aside.

Using your fingers, remove the skin off the mushrooms. Discard the skin.

Preheat the oven to 350F and prepare a baking tray lined with slightly greased foil or parchment paper.

To prepare the stuffing, saute the onion in olive oil on medium heat for about 4-5 minutes. Add the reserved chopped mushrooms, saute for another 3 minutes, and add garlic. Cook the garlic for another minute and turn the heat off.

Break the bread into small pieces and process in a small electric chopper or food processor until breadcrumbs form. Transfer the breadcrumbs into the mixing bowl. Add the sauteed onion, parsley, dill, and a touch of salt and pepper. Mix everything together.

Place the mushrooms onto the baking tray and top them with the breadcrumb mixture.

Bake for about 20-25 minutes, or until the mushrooms are tender and the breadcrumbs are golden. Serve with lemon wedges.

medium raw button mushrooms ((about 1 1/2 pounds))

Preheat the oven to 350 degrees F. Set out a 9x13-inch baking dish. Gently pop off the stems of the mushrooms. Discard the stems or save for later use. Then use a damp paper towel to brush off the dirt on the mushroom tops. Do rinse them in water.

In a medium bowl, mix the cream cheese, smoked cheddar cheese, diced red pepper, onion, and garlic together. Add 1/4 teaspoon salt and 1/4 teaspoon ground black pepper. Mix well.

Use a spoon to pack the cavity of each mushroom with cheese filling. It's ok if it pops over the top a little.&nbsp;

Press each cheese-stuffed top in grated Parmesan cheese to create a crust. Then set them in the baking dish, cheese-side-up. (It's okay if they are tightly fitted in the baking dish, because they will shrink while baking.)

Bake for 30-35 minutes, until the tops are puffed and golden. Serve warm.

Prep the Mushrooms

Clean the mushroom caps with a damp paper towel to remove dirt, then carefully remove the stems. Arrange the mushroom caps evenly on a baking sheet, ensuring they are ready to be stuffed.

Make the Filling

In a mixing bowl, blend the softened cream cheese with grated Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, salt, and pepper until the mixture is smooth and evenly combined.

Stuff the Mushrooms

Using a spoon, fill each mushroom cap gently but completely with the prepared cheese and herb filling, making sure the filling sits evenly in the cavity of each cap.

Bake

Drizzle the olive oil evenly over the stuffed mushrooms. Place the baking sheet in a preheated oven at 375°F (190°C) and bake for 20 to 25 minutes until the filling is golden brown and bubbly. For an extra crispy topping, optionally broil the mushrooms for 1 to 2 minutes at the end of baking.
