Make the perfect light, fluffy dumplings for your stews and casseroles with only a few ingredients.

Suet Dumplings

all purpose flour

suet

salt

baking powder

Sift the flour into a medium sized bowl. Add the salt and baking powder.

Mix the suet into the flour.

Add 3 tablespoons of cold water.  If the dough is dry, add more water until you have a soft, slightly sticky dough.

Divide the dough into 8 evenly sized pieces and shape into round balls between your palms.

Place the balls on top of a simmering (not boiling) stew for the last 20 minutes of its cooking time laying them on the surface of the liquid about 2 inches apart. Cover the pot with the lid and cook for a further 20 minutes. Remove the lid to be sure the dumplings are well-risen; if not, cook for a few minutes more.

Alternatively, you can steam your dumplings in a steamer placed 2 inches apart for 15 to 20 minutes or until fluffy, tender and cooked through.

Traditional British Suet Dumplings

130 g (~ 1 cup) vegetable suet

260 g (~ 2 cups) self-raising flour

herbs

tsp salt

tsp black pepper

tsp garlic granules

250 ml (~ 1 cup) water

Add the vegetable suet and self-raising flour to a large bowl, and add the remaining dry ingredients. Mix to combine. Add the water, and mix with a fork to create a sticky dough.

Dollop the dumpling mixture on top of your favourite stew when it's nearly cooked. Add a lid, and return the stew to the oven for a further 20-25 minutes, until the dumplings are firm. I like to remove the lid for the final 10-15 minutes of cooking time, to help them to crisp up a little.

I added the dumplings to my vegetable soup they were delicious 😋

I made this recipe as instructed. The only change was adding some fresh rosemary from my garden.

I separated into 6 x 100g dumplings and cooked for 5 minutes in my pressure cooker with a lamb stew. They were exceptionally light and fluffy!

That’s the correct British way . To much water makes the stodgy .

Combine the flour, baking powder and salt in a bowl. Add the shredded suet and stir to combine.Using a fork to stir the mixture, add just enough water until the mixture comes together to form a dough ball. Start with less water and add more as needed to avoid making the dough too wet. It shouldn&#39;t be very sticky or crumbly - it should be just moist enough to where you can easily form it into balls.Divide the dough into 12 equal pieces and roll them into balls in the palm of your hands.

To cook the suet dumplings: Whether you&#39;re making the stew on the stovetop or in the oven, toward the end of the stew&#39;s cooking time, place the suet dumplings on top of the stew in a single layer, cover with the lid, and let them simmer with the stew for 20 minutes. If you like a crispy exterior, remove the lid after the 20 minutes and continue to cook them for another 10 minutes or so until lightly browned. If necessary you can bump up the temp a bit.

I was really delighted to stumble upon this recipe.  Suet dumplings were a favorite throughout my childhood, something I looked forward to, and I continued making them through my early years of marriage.  It's been quite some time since I had them and I had long since misplaced my receipt for them.  So as soon as I saw this I smiled and knew I had to make them again.  Already have Atora (even as an expat Brit I still have to make my puddings and such), and so made them that very evening with my stew.  These were as lovely and delicious as ever.  So happy to have revived an old tradition and look forward to making them again.
