S'mores cookies -- a delicious new way to enjoy s'mores!

S'mores Cookies

unsalted sweet cream butter (softened, (220 grams))

sugar ((150 grams))

light brown sugar (packed, (175 grams))

eggs

½ tsp pure vanilla extract ((2.5 ml))

all-purpose flour ((292 grams))

graham cracker crumbs ((or about 7.5 graham crackers-crushed) (125 grams))

cornstarch ((8.5 grams))

tsp baking powder ((4 grams))

½ tsp baking soda ((2 grams))

½ tsp salt ((2 grams))

mini marshmallows* ((80 grams))

chocolate chips

oz chopped milk chocolate bars

In KitchenAid mixer, cream together butter and sugars on medium speed until light and fluffy.

Add eggs, one at a time, and then vanilla, stirring until combined.

In separate bowl combine flour, graham cracker crumbs, cornstarch, baking powder, baking soda, and salt.

Gradually add flour mixture to butter mixture, pausing periodically to scrape down the sides of the bowl with a spatula.

Stir in mini marshmallows, chocolate chips, and milk chocolate pieces.

Preheat oven to 375F (190C) and line cookie sheets with parchment paper.

Portion cookies into 1 ½&quot; balls. If desired, press additional pieces of chocolate bar or marshmallows on top of dough.

Bake on 375F (190C) for 10 minutes.

Allow cookies to cool on cookie tray for 5 minutes before transferring to wire rack to cool completely.

Blueberry Cheesecake Cookies

graham cracker crumbs

¾ tsp baking soda

tsp baking powder

salt

cinnamon

salted butter, softened

white sugar

egg yolks (room temperature)

tsp vanilla extract

lemon

blueberries

tbsp white sugar

lemon juice

block (8 oz) Philadelphia Cream Cheese, softened

sugar

tsp pure vanilla extract

heavy cream, cold

Whisk

In a medium bowl, whisk together flour, graham cracker crumbs, baking soda, baking powder, salt, and cinnamon.

Cream

In a separate large bowl, beat the softened butter, sugar and lemon zest until light and fluffy (about 2 minutes).

Mix in egg yolks, and vanilla until fully incorporated.

Slowly add the dry ingredients to the wet mixture and mix just until combined (don’t overmix!).

Scoop

Scoop 2 oz cookie dough balls (or preferred size) onto a lined baking sheet and chill for at least 1 hour to prevent spreading.

Make the Graham Cracker Cookie Dough:

Place

Place chilled cookie dough balls 2 inches apart on a parchment-lined baking sheet.

Bake

Bake for 12-15 minutes or until the edges are light golden brown but centers are still soft.

Cool

Cool completely before adding the cheesecake topping.

Bake the Cookies:

In a small saucepan, combine blueberries, sugar, and lemon juice over medium heat.

Cook for 5–7 minutes, mashing the blueberries as they burst, until thickened and jammy.

Remove from heat and set aside to cool fully.

Beat

In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.

Add the cooled blueberry jam and mix until well combined.

In a separate bowl, beat the cold heavy cream until stiff peaks form.

Fold

Gently fold the whipped cream into the blueberry-cream cheese mixture to create a light, fluffy texture.

Refrigerate

If needed, place in the fridge for at least 30 minutes to firm up.

Make the Blueberry Cheesecake Topping:

Top each cooled cookie with a generous scoop of blueberry cheesecake filling.

Garnish

Garnish with fresh blueberries + crushed graham cracker crumbs for extra cheesecake vibes!

Drizzle

Optional: Drizzle white chocolate or add gold leaf for a fancy touch.
