Easy Overnight Oats - 4 Flavors

rolled old fashioned oats (43 grams) -

milk

non-fat greek yogurt

vanilla extract

apple

Cinnamon powder -

pecans

banana

tbsp cacao powder

butter

hazelnuts

berries

Coconut flakes -

Rice puffs - for the additional topping options

almonds

Combine base ingredients in a suitably sized glass or bowl.

Mix well, cover, and refrigerate overnight, or for at least 2 hours.

Serve with your favorite toppings and enjoy!

Making the oats

In a saucepan, dust apples with cinnamon powder, add 1 tablespoon water, mix then cook on medium heat until softened.

Top your overnight oats with warm apple cinnamon mixture and pecans.

Apple Cinnamon option:

Make the oats as above, but add 1/2 mashed banana and 1 tablespoon cacao powder to base ingredients. If you would like it a little sweeter, simply add some more sweetener.

To serve, top with other 1/2 banana, hazelnut butter and chopped hazelnuts.

Teff hotcakes with tea infused maple syrup

(150 grams) currants

tea bag (we used Earl Grey)

(120 grams) teff flour

(130 grams) millet flour

tsp bicarbonate of soda

tbs brown sugar

(300 grams) ricotta,

(310 milliliters) milk

tbs coconut oil

(165 milliliters) maple syrup

cinnamon quill

cloves

This Anzac-inspired bread will fill your house with the sweet perfume of cinnamon and spice. Macadamias add crunch, while a little orange zest makes it even more irresistible.

(185 milliliters) milk, warmed

Big, fluffy muffins are filled with fresh sliced strawberries and topped with a buttery crumble topping. These Strawberry Crumble Muffins will make the perfect addition to your next brunch menu.

Strawberry Crumble Muffins

all-purpose flour

unsalted butter (melted)

baking powder

nutmeg

½ cups full-fat buttermilk

strawberries

Preheat oven to 400 degrees Fahrenheit. Line a muffin tin with paper liners, spray liners with cooking spray, and set aside.

In a medium bowl, combine sugar, flour, cinnamon and melted butter. Mix with a fork until a crumbly texture forms. Set aside.

In a large bowl, sift together flour and baking powder. Add cinnamon, nutmeg, and sugar and whisk to combine. Set aside.

In another medium bowl, add egg, egg yolks, vanilla and buttermilk and whisk to combine all ingredients. Add melted butter and whisk to combine.

Make a well in the center of flour mixture and pour liquid ingredients into well. Fold batter with a rubber spatula until all ingredients are just combined.

Fill each muffin cup almost all the full (a little over 3/4) with muffin batter and then generously top each muffin with crumble topping. You may need to break up the crumble topping in between your fingers. These will be big muffins! I use a cookie scoop to fill muffin cups.

Bake muffins at 400 degrees for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Allow muffins to cool in the pan for 10 minutes then remove them from the pan and transfer to a wire rack to cool completely.

Serve muffins warm or room temperature. Enjoy!

These light, fluffy waffles are loaded with robust chocolate flavor from dark cocoa powder and dark chocolate chunks and are bursting with fresh sliced strawberries!

Dark Chocolate Chunk Strawberry Waffles

whole wheat or all purpose flour*

cocoa powder

chocolate protein powder**

stevia baking blend***

almond milk

tsp vanilla extract

In a large bowl, whisk together flour, cocoa powder, protein powder, baking soda, stevia, cinnamon and salt until combined.

In another bowl, beat together egg, vanilla and almond milk. Pour egg mixture into flour mixture and mix with a rubber spatula until combined. Fold in strawberries and chocolate chunks.

Heat a waffle iron and spray generously with cooking spray. Spoon heaping ladlefuls of batter onto waffle iron and close top. Cook waffle for 5-7 minutes, until golden brown and cooked through. Repeat the process with the remainder of the batter. You should get 4 large waffles.

Top waffles with sliced strawberries and warm pancake syrup if desired. Enjoy!
